Quiche

I have always loved Quiches. The rustic, heartiness is just delightful. My favourite Quiche is the tried and true Onion Quiche. However, I have never really cooked any other Quiche than this one. It is time to change that. Please share your favourite Quiche recipe with me. Thank you myLotters!

I like Quiche with shredded carrots, onion, and lots of spinach. I do not like how runny it comes out though. The excess moisture from the veggies rolls out when you cut it to eat it. The bottom of the crust is all mushy. I think that there must be a way to fix this so that it would be my favorite.

Thank you for your response sysdexlicwriter. I add vegetables to nearly everything else. I will have to try your combination. Do you blind bake for your quiches? I do this with the traditional onion quiche and am not pestered by mushy crust.

Blind baking is where you cook a pie shell without filling it. Traditionally people used weights such as beans or cleaned stones to hold the pastry down. For my quiches I blind bake for about 4 minutes at 400 degrees. Just to give it that jump start.

I too love Quich and I would see it in the stores frozen food section and it was so high for just one serving, so one day I thought why not make one of your own. I looked on the internet and found what seemed to be a easy recipe. And it was perfect.i take just the basic quiche recipe and add what I like to it. I cook some bacon and fry it down then put in onion, garlic, bell pepper and fry it to where they are soft, add some spinach and fry it down with other veggie. When this is done I pour it all (grease drained off) in a pie crust. I add a hand full of cheese, what ever kind you like) enough to cover the top and spread it around, to cover the veggies. to this I one cup milk and 2 eggs that I have beaten pour on top and bake at 350 till a knife inserted into the middle comes out clean.About 45 minutes to an hour. It does not run when you cut it. You should let it set about 15 minutes before cutting.

Well I was looking for my recipe and can't find it, but I put the milk just below the line on the pie crust where it starts to fold over onto the lip of the pie pan, do you know what i mean,not fill the crust up to the very edge but just before you get to the lip of the plate, I never had any problems with it I have made 2 now and I have quite a bit of bacon, spinach, onions, etc in mine so it probably fills up the pie pan pretty well. There are tons of recipes for @uiche on the internet.

Thank you bdugas. Do you find your ratio of 1 cup milk to 2 eggs problematic? I have found when I lower the egg ratio to milk/cream I have problems. Takes longer to cook. Pie shell is soggy/damp. Not as hearty. Any of those things?

I understand perfectly bdugas. Traditionally, quiches are made with a large egg to cream ratio. This ensures the quiche is "heavy". And also sets up well. :)

What a wonderful idea! I have my friend come over once a month for a dinner and I was at a blind alley trying to figure out what to do...and a quiche is just the thing! Thanks for the idea. Two men were at a restraunt and one man orders and the waitress was waiting for the other man to order. He puts down the menu and says, "Yeah...I'll have a quickie." The waitress slaps the man across the face and leaves in a huff.
