I have to say that Mexican cheese is very delicious. "Queso Ranchero" or ranch cheese! Amazing on Quesadillas.
Cheese from northern Italy is quite tasty as well, they have a but of influence from the Swiss, but still manage to keep their Italian authenticity!

I absolutely love most cheeses. If I had to pick a favorite, it would be Swiss. One kind that I do not like is Feta, because it is too salty.
In my lasagne I use mozzerella and cottage cheese. I mix the cottage cheese in with the sauce, mmmm so good.
For tacos and such I like sharp cheddar or monterey/colby. All this talk about cheese is making me hungry!

I enjoy a wide variety of cheeses, but my all-time favorite is Muenster. Unfortunately it tends to be expensive here so I don't indulge often.
In general I like firm snack cheeses a bit more than the soft or semi-soft types. Edam, Gouda, Brick and of course Cheddar are on my menu. For cooking purposes I love cheddar and mozzarella the best.

I haven't sampled many types of cheese, but I've loved everything I HAVE tried. I've had a handful of types such as gouda, brie, blue, and the "regular" cheese such as cheddar, monterey/pepper jack, provolone, etc. I love any cheese with a chunk of fresh baguette.

I like all cheese expecially mozzarella,parmesan, roquefort(goat cheese) and gouda... yum!!! Though they're a bit expensive here and I rarely treat myself with those lol...
hmmm...except white cheese... eeek! the first time me and my sister took a bite at a white cheese because it looked so delicious, we found out that it was so salty and a bit mushy even though it is fresh. eeek! My aunt love those and she laughed at us when she saw our expressions.
Everytime we visit our mom and bro to the province my sis and I bring different kinds of cheese to experiment on because my mom is really good at cooking... hahaha...
for mozzarella and gouda, my family sometimes make homemade pizza and grilled sandwiches. my mom used a little roquefort on her spaghetti to make it tastier and on some salad dishes...
for me, I just eat them or make sandwiches when I go to work or on my days off... lol
