Lazy Lady Lasagna

Here it is almost 4 pm and my husband is due home in about 30 minutes. I forgot to take something out of the freezer for dinner, which I tend to do often. I look into my cupboard to see what I can muster up for dinner and BEHOLD! I see a box of Mafalda pasta, they look like mini lasagna noodles. So I figure I will make cheese Lasagna. All I have is Cottage Cheese, no Ricotta, so this is what I use along with some shredded Mozzerella and shaker Parmesan. Mix all the cheeses with a beaten egg, Italian seasoning, pepper and garlic. I then get out a casserol dish, layer it with sauce, noodles and the cheese mix ending with the cheese mix, put the cover on and pop it in the oven at 350degrees for about 45 - 60 minutes. I take the cover off for the last 15-20 minutes and place the garlic bread next to the lasagna. Dinner is served with a salad and garlic bread and maybe a glass of wine. I also took something out of the freezer and put it in the refrigerator for tomorrow night. LOL I am sure we have all just throw something together quickly wen we are running late or like me forgot to take something out of the freezer. What have you cooked last minute?

Generally,I take my food in hotel only. So rarely I cook at my home. If your dish is good then send this dish to me as well so that I can also enjoy.

Hi Neerajpandey, That is funny. It came out really good and I do have some leftovers, enough for 2 or 3 and some garlic bread to go with it. Let me know where to send it ;)

Well unsure of what to make tonight I'm just doing spaghetti. The meat isn't thawed out but typically tonight when my daughter has her troop meeting I make a meal in the crockpot and I just didn't think about it today, too busy with my kids... mylot.. laundry... appointments ect. Oh well everyone likes spaghetti

Hey Snuggle, Yes, you are right, everybody loves spaghetti in this house too. I always have some sort of pasta in the cupboard. It is amazing how quick the days get and we have to rush to get a good meal on the table. It just may be an art! LOL Thanks for responding and have a great day!
