Quick To Judge - Just Human Nature?

I'm sure many of us would love to believe that we aren't quick to judge people - and go along with the saying, you shouldn't judge a book by its cover - but is that truly the case? Can we honestly live our lives without judging anyone before getting to know them or is it just human nature that we take our past experiences and judge people as a precautionary measure?
For me - I think no matter how much you try you are going to judge people no matter what because its an unconscious thing we do to protect yourselves from bad judgments in the past or what we've been taught.
Its like when you are walking down the street along and some is falling behind you - maybe you just happen to be going around the same place but because of what we've been taught first thoughts jump to "OMG I'm going to get kidnapped, this person is stalking me", etc.
Or another - you are dating a person and they did something incredibly bad to you. When you go to find a new person there are going to be small things that might remind you of an ex so you don't try to start anything with them because of that thought it your mind and you think they're going to do the same thing - and they might be the nicest person in the world.
So mylotters - what are your views?
Can you not judge? Or is it going to happen no matter what?
