Going back to college

I graduated from Florida State University 3 years ago. When I started going to school, I had no idea what I wanted to do with my life. I have a degree in International Affairs. It sounds really good on paper, but what type of job do you get with that???? I have heard so many employers talk about how it does not matter what type of degree you have as long as you have one. I am starting to disagree with that statement. I realized that for a lot of jobs, you need to have a specific degree or specialized training in that field. So I think I am going back to school. I want to be a nurse. I can['t be a nurse with an International Affairs degree. Has anyone else had the same experience?
