I just got my oven back and would love to start
making more homemade dishes, like chicken noodle soup.
Not just the stuff from the can which has so much
salt.
Do you know of any really good homemade chicken noodle soups?
Do you have a recipe? Maybe something with a wider noodle?
Though anything would be fine.

In fact the homemade chicken noodle soup can be quite simple. If you don't like the fat very much, then remove the chicken skin before you make this soup. Put the chicken into the pot and add some water inside. Add a few pieces of gingers inside. Boil it for within an hour and it will be done.
I love China

That sounds easy enough.
Do you know what type of spices she uses?
I prefer basil and garlic.
But I would love to hear what others use.
Thanks for the tip.

I prefer cooking my own chicken noodle soup rather than using the ones straight from the can or packet... but it depends mainly on the available ingredients in my fridge... but as long is i have the key ingredients... like any part of the chicken, evaporated milk, noodles, and some veggies... then i just go for it...

I make mine in the crock pot. I boil the chicken and de-bone it first. I had that along with about a cup of the broth from boiling it. Then I add a large can of Swansons broth. then I add onion, celery, carrots, peas, green beans and any vegetable I have available. I let it simmer all day and make biscuits to go with it....so so good. Occasionally I will rather than add broth...add cream of chicken soup which brings an entire new flavor and is so so good over potatoes or toast.

One of the best things about soups is that you can do whatever you want with them!
If you want to reduce the sodium of your soup, one of the best things to do is to make your own stock. You can use chicken stock or vegetable stock. Simply simmer the chicken carcass or vegetables in water for several hours. The flavors will fuse into the water. Dump out the veggies or the carcass and you have your stock!
For chicken noodle, the chicken stock would be great. Buy one of the little chickens from the store. Take all the meat off and set it aside. Use the carcass for the chicken stock.
Add the chicken meat, in little pieces, to the chicken stock. Pick your favorite veggies for the soup - carrots and celery are some of my favorites for chicken noodle. Cut those into bite sized peieces. Corn also goes well in the soup. Add in whichever noodles you want. I prefer to use egg noodles. You can use fine egg noodles or the extra wide ones - whichever you like best.
Once you have all of your ingredients in there, simmer the soup until the noodles are cooked.
Then all you have to do is enjoy! Remember, you can add anything you want. So if you like pepper in your soup, add it! If you want onions, add it! If you dont like carrots, dont put any in! Experiement with it until you find what you like best. Then write it down so you can repeat it again later!
Good luck! I hope you enjoy your soup.
