I'm new to cooking and I am always experimenting. I am trying to find a way to sautee veggies without them getting soggy. I usually put oil or pam in the pan add some garlic then the meat and wait for the meat to get halfway cooked then add like peppers or veggies but it always seems to get soggy. Any ideas for a new chef?

I also use a wok so the veggies don´t get soggy. And as I like my veggies very crisp and al dente, I fry the meat first at the wok and put it in a plate. All the juices will be there too so the wok is almost clean. Then I add more oil and throw in my veggies when the wok is very hot. At the end I add the cooked meat to heat. By the way, I´m cooking that for dinner. I have been out all day and want to do something easy. I have some leftover fried rice for the side and bought some soy sprouts to add to my veggies. Take care

If you are sauteeing than yes your food will get soggy, that is what sauteeing is. If you mean that you want a crispier veggy, than you want to stirfry it. try using a wok. It has different heat zones, it will cook the meat and leave veggy's crisper.
