Eggplant Parmesan

I want to make eggplant parmesan for dinner, but I don't know how. Do you use the eggplant as the meat with your pasta, or is it a pasta-less dish? My mom and I have been arguing about it on the phone today. I say serve it with pasta, she says not. So all of you Italian efficionados out there, please tell me how to make it. Thanks in advance!!

Mmmmm! What time is dinner? lol. Ok. There are tons of ways to make eggplant parmesan. I usually cut it into slices, dip in egg, dip in corn starch, coat with bread crumbs and then fry in oil. You can use some already made pasta sauce. I layer the eggplant in an oven proof dish. Put some sauce on the bottom, then the fried eggplant slices, top with sauce and grated mozzarella cheese. Or, I just eat it as it is or make a sandwich on some hero bread. You don't really need pasta but, hey, if you like pasta, have some!

That's the great thing about it. You can use a meat sauce, some chicken, whatever you want. I love it because it's just so darn easy to make and usually quite tasty. I've even baked the coated slices versus frying them to make them a little "healthier". Just put a little oil, or even butter or margarine, in the bottom of the pan. Bake at a little higher temperature for about 15 mins per side. Yum!

I agree with you that you dont have to have pasta with the eggplant parm! In fact, most times I will serve it with garlic bread and veggies. The eggplant itself is very filling, so you dont need another filling food to go with it.
I hope your eggplant parm turned out great!
