Any recipes for easy and quick meals? Help please!

My husband and I both go to the office everyday. Many times I would come home from the office already very late ad very hungry. What would be quick and easy meals that I can cook for dinner within 10 to 30 minutes?

if you're a rice person like most of us filipinos, you can have the rice cooking while dishing up a meal. now, what do you prefer to go along with your rice? meat, seafoods, vegies? if you're fond of vegies, you can buy pre-cut vegetables commonly sold in supermarkets. depending on what dish you'll cook. often, you can just saute the vegies and add some spice and herbs. since it's pre-cut, it saves time for cooking. often this type of dish will take 5-10 minutes. anything fried and cut into small strips is quick cooking. when you buy meat from the supermarket, you can get nicely cut pork and beef or chicken choice cuts. you can just season it with salt and pepper or any breding mix. when you cook, cover the frying pan. this makes cooking time 25-30% faster. frying is about 7-15 minutes. our famous adobo is probably one of the easiest and less work. with choice cuts for chicken and pork (again small cuts for quick cooking), put everything in a cooking pan, meat and all seasonings. cover the pan, and leave until sauce is almost dried up and stir until evenly cooked. this takes 20-25 minutes. (mind you, this may not be the best way to cook adobo, but when you want it done quickly, this is one way to do it.) shrimp is also fast and easy. medium sized shrimps drowned in a bottle of sprite, add a spoonful of butter and top with a little garlic. bring to a boil, simmer in the soda under low heat until almost dried up. this cooks for about 10 minutes. more than that and it will be overcooked. there are lots of meals that are easy to cook and requires less time if we have reduced the time in the preparation like the slicing, dicing, grating etc. i also like quick cooking meals because when i'm tired, i don't have much energy to cook. :)

Thank you so much for all the ideas you shared. They all seemed very practical and quick to do but sad to say, I am allergic to chicken and I don't eat pork and only very little beef. The veggie idea is worthy trying though. I'll go get some of those pre-cut veggies when I go shop for groceries within the week. Thanks again and enjoy myLotting!

Do you have a Crockpot? Most meals can be assembled before work and eated as soon as you get home. I use my CrockPot all of the time. I love putting chicken and BBQ sauce in it and potatoes on top. Turn it on 'low' for the day and *TaDa* it is done when you get home. Open a can of veggies and put in microwave for a few minutes and supper is served. How easy can that be?

I like to make a chicken pasta salad. If you cut up the veggies the night before marinate the chicken in whatever dressing you like I usually use Kraft Caesar vinaigrette with Parmesan dressing and marinade. When you get home all you have to do is put water on to boil use any type of pasta that you like. Put the chicken on a grill indoor or outdoor. Cut up in pieces when done add to the pasta with tomatoes, carrots, greenpeppers etc. Add any type of veggies you wish. Put all together and add more dressing to your liking. Its great and refreshing. I also put together a pasta dish with garlic bread that is pretty fast. Angel Hair pasta, olive oil, red pepper flakes, breadcrumbs, minced garlic. Put the water on to boil for pasta. In frying pan add olive oil, minced garlic, red pepper flakes and breadcrums. Stir till brown. Add to cooked pasta with garlic bread on the side or italian bread. I also like to make BLT's or just scrambled eggs and toast when I don't feel like cooking. What I also like to do is one day cook making enough for leftover the next day. So you have every other day off from cooking. I hope this helps in some way. Good Luck and have a great day.

Pasta can be cooked very quickly, but I don't think you would want to eat pasta everyday. However, if you don't mind eating pasta often, you can buy ready made sauces and use them with your meals. When it comes to meat, it all depends if you defrosted it it beforehand. If not, you would have to place the chicken or meat for up to 5 mins in the microwave. However, in the meantime you can prepare some salad or side dish with veg. Chicken is easier to cook when you chop it up in small pieces, it cooks evenly in less time. I always have ready made sauces like tikka masala or sweet and sour or the chicken tonight variety, where I can just add to the cooked chicken. As for side dishes, you can also use the pre cooked rice. Most of them are ready in less than five minutes. They are not as tasty as preparing a risotto for yourself, but if you are in a rush, they can be good.

The crockpot was mentioned earlier. That is a fantastic idea! One of the other things I will do is make casseroles. You can make them the night before or in the morning before you leave for work. Then when you get home all you have to do is pop them in the oven! You can do that before you do anything else. By the time you finish changing and setting the table, dinner should be ready! Something else I have done before is set the oven timer. My oven has an option for a start time and an end time. This way you can put your dinner in the oven in the morning and it will be ready when you get home! This is great for a day you know you will be working late. You can put a roast or a tenderloin in the oven in the morning before you leave. I usually do this when the meat or casserole is still frozen. It will thaw out during the day so you dont have to worry about it sitting out all day! I also make some homemade versions of hamburger helper. You can buy packets of seasonings to use. Then all you have to do is brown the meat, add the seasonings water and rice or pasta and let it simmer! Good luck!

breakfast items, pasta, rice with vegetables, casseroles, crockpot meals - these are all very good ideas from the people above i make a chicken salad with leftover grilled chicken or a cooked chicken from the grocery store, shredded carrots (you can find them in a bag at the store too), some mayonnaise, mustard, onion, celery, and crunched up potato chips and serve it over lettuce also, check out rachel ray's cookbooks for ideas on meals she makes a lot of diverse foods and they have always turned out great for me
