There are so many things you can do with chicken! Why do you need this recipe? Do you want something easy? Do you want something for company? Do you want something that will make great leftovers? Is this something for a pot luck? All of those scenarios can lead to different situations! One of my favorite easy, company chicken dinners is what I call salsa chicken. I like this because I can throw it in the oven and still spend time with the company! I put rice and chicken in a casserole dish. I add enough water to cook the rice. I then mix in some salsa. Bake until rice is tender and chicken is cooked. It really gives it a tasty kick. Fix some veggies or salad to go with it. Simple, quick, easy!
