The simplest way to cook chicken is to fry or cook it with soysauce, vinegar we called it here in the Philippines "chicken adobo". It is easy to prepare you need to saute the garlic, onion and ginger. Then put a little water then add soy sauce and vinegar after the sauce is reduce it is done. It is my favorite dish I think it is difficult to adjust and to change your diet if you going to marry a non-vegetarian.

The simplest way is to roast it (Or bake it if you prefer American terminology - its the same thing) You can find a lot of information online, plenty of ideas and information.
The important thing to realise when cooking chicken is not to undercook it and be especially careful if you have a frozen bird. Make sure that it is fully defrosted before you start to cook it.
The reason for that is that chicken can harbour salmonella bacteria and if it is undercooked, these bacteria will not be killed and you'll all end up with a bad case of food poisoning. It's perfectly safe though just as long as you are careful to cook it properly.
