In the sentence "He met with President Ulysses S.Grant and poet Henry Wadsworth Longfellow, among others, to promote his project and figure out, as he said,"if the dream could become reality.", can I turn "met with" at the beginning of the sentence into "met",and what's the meaning of "among others"?

you can,but "met with" implies it was by appointment,not as a friendly meeting,as "met" might. "among others" means too many people to list usually.

It looks like you can change "met with" to just "met". "Among others" means he met with other people besides President Ulysses and Henry Wadsworth Longfellow but only these two were mentioned. Probably because the other people weren't as important.
