Fried Rice

I love fried rice and so do my 2 little boys. When we eat it I make it myself as we don't live very close to a town, I usually just make it up as I go but I would love a proper, authentic recipe to use. Has anyone got a great authentic recipe they could share with me? I really appreciate any recipes given, thanks to you all!

i love fried rice, i use jasmine rice often, cooking it the night before, using some for rice salad too.
4 cups cooked rice, finely chop 2 shallots
1 cup peas 2 eggs
about 500g chopped ham AND bacon, about 200g very small prawn pieces
1 chicken stock, maybe 2 spoons soy sauce and 1 oyster sauce.
best cooked in peanut oil.
i scramble the eggs and add last with peas.
personally i sometimes leave the shrimp and use bacon and chicken.
also beanshoots are nice.

yummmmmm! i love fried rice in the morning, i cook my own fried rice by adding garlic, shrimps, oinion springs, eggs, oyster sauce and whole kernel corns..

I don't have an authentic recipe... But I know that you should use day old rice (for a better fry) green onions, soy sauce, oyster sauce and at the every end, add a scrambled egg to a clear spot in the middle of the pan and let it cook for a minute or two before starting to fold into the rice so that it actually looks like its supposed to...
Good luck...
Oh, and use a good oil, and add peas very very last or they get smashed and gross...

Thanks very much! I usually cook the egg first as a thin omelette and slice it thinly ready to add last...I have never thought of doing it in a space in the middle of the pan - thanks for the tip! I always add peas near the end, it just doesn't taste the same without the peas does it! Thanks again
