Healthy Crepes....is there such a thing

Has anyone had crepes made with buckwheat flour instead of all purpose flour. They would be considered gluten free and don`t taste any different. If you have any ideas or recipes you could pass then on.

hERE is my favorite recipe.. 3/4 c buckwheat flour 1/4 c gluten free flour (rice or sorgum is best) 1/2 t salt 1 1/4 c milk (or milk sub) 3 eggs 4 T butter Beat all together and let rest for 2 hours! I find it works best if you put all the ingredients in a blender and beat until smooth. Good luck!
