I don't know if it would count as a recipe unless you have it as an appetiser but my favourite way of cooling off is a large glass of tomato juice with lots of ice, a slice of lemon and lots of worcestershire sauce, it is filling, cooling and healthy and the funny thing is I only ever touch it in summer.

There is a cold soup that Koreans like to have on hot days and it is really easy to make. I'm not sure if you like it but you never know.
Fill a large bowl with ice cold water and add soy sauce and vinegar to taste to your liking. Then take a cucumber and slice it paper thin length wise and cut those into tiny little strips. Most of the cucumber should float. Then sprinkle some sesame seeds as generously as you like. Stir then ladle into smaller bowls.
I'm sorry that I don't have any specific measurements. This soup is so easy that all you need to do is know the ingredients and flavor to your liking. You can even add ice cubes.

I love this coleslaw for summer because it's lighter and sweeter than a mayo based one.
1 lb. bag coleslaw
1 cup sesame seeds
2 packages Oriental flavored Ramen noodles
1 cup sliced almonds
1 bunch green onions
Dressing:
1/2 cup canola oil
1/2 cup sugar
1/3 cup vinegar
2 seasoning packets from Ramen noodles
Mix together coleslaw, onions, noodles. In a seperate bowl, mix dressing ingredients. Pour over coleslaw and stir. Prepare several hours ahead. Add almonds and sesame seeds right before serving.
