I see you have already gotten many ideas and directions for making traditional Smores. You will like them. In our Girl Scout troop, we had health issues to deal with. We learned to make a healthy version of Smores.
Slice green or red apples sideways. Remove the seeds and the center core area. It will look like a doughnut since it has a hole in the middle. Spread peanut butter on two slices of apple. Use these to make a sandwich with a toasted marshmallow in the middle.
This is a wonderful recipe for people who have diabetic issues. And it is lower in the sugar content for other people (kids). The peanut butter is a good source of protein. You can adjust this recipe idea for any diet.

Smores can be done in the microwave too, so you could always practice there. We also used to make them on my mom's fire place!!! As far as things to do while camping, my daughter literally just turned 6 and totally digs the idea of fishing. Let them think they might catch you dinner, and you have a winner. My son is four, and I took him to the lake, and he was content sitting on the shore, playing in the sand! At that age they should be pretty easy to entertain, especially if they have never been before. Even if it's hot, do a campfire and sing songs. My daughter loves to sing! Depending on where you are going, you can probably get some information on age appropriate things in the area!
