You can dry oregano and thyme. Don't overwater the oregano; it will take over your entire herb garden. I also grow spearmint and peppermint in my herb garden. I use them along with catnip (catmint) in teas. The cats love the teas; I have to keep the jar hidden from them. You can pretty much dry all herbs that you grow. I have yet to encounter a herb that you can not dry and store for later use.

Cilantro and Parsley, I cut them with scissors, wash them, pat them dry and put them in Ziploc bags. Then I throw them in the freezer. I can use them whenever I need them. I suppose you could dehydrate them also.

Hey Laura! I have a herb garden, and I find that I can cut basil, bring it in the house to dry it out completely, before storing it in an airtight jar. I think you can do that with most herbs.
With my chillis and jalepeno peppers, I pick them when ready, wrap them individually in foil and store in the freezer for later use.

I freeze herbs in ice cube trays so they are still fresh when used and another way to store them well is to add to bottles of olive oil to infuse the oil with fresh flavours for either cooking or salad dressings. I think freezing them preserves the flavour much more than drying them.
