In the sentence "If there was a drought and the grain harvest failed, they(farmers) didn't have other resources and that's why they were subject to malnutrition or even starvation.",can I replace "subject" with "subjected"?

Yes, I think so. I guess it should be 'subjected' really because your linking verb, "were" is past tense so observing the subject-verb agreement, you should use the past participle. There, I hope my answer helped you...Happy mylotting my friend. Keep on asking questions. Goodluck to you.
