Bacon Cheeseburger Soup

My daughter has been asking for specific things since she got home from college for the summer. I about croaked when in 88* weather she asked for potato soup this morning! I got home and started peeling potatoes (Yes, she's a bit spoiled but after I thought about it, I decided it sounded good and what could be easier.) I noticed that Mike had taken out a pound of hamburger meat. Great Now I had to come up with something to do with this meat, as well as the 10 potatoes that I just peeled! So, here's my concoction that actually turned out pretty good! One Pound hamburger meat, browned 1 small onion chopped 1 small clove garlic chopped 10 medium potatoes, cut into bite sized pieces. Add meat, onion, garlic and potatoes to large soup pot. Add enough water to cover all ingredients plus about 2 inches. Salt and Pepper to taste Cook on Medium heat for 1 hour. Add 1 cup cheddar cheese sauce and 5 pieces of bacon cooked and crumbled. Mix and simmer on low heat for 15 minutes. Whalah! Dinner is served.

This sounds good and easy. Wonder if we could adjust the cooking time for the crockpot, that's my favorite way to make soup. What kind of cheese sauce did you use? Of course it is too hot to make soup Maybe another day.

I thought the same thing, but it was actually pretty good! I'm sure it wouldn't he hard to adjust the cooking times. I do it all the time for soup recipes. Normally if it's a cream soup, I just add a little more water and turn the temp on low to keep it from scorching. I used the canned cheddar cheese sauce from Sams Club. If you've got one of those around.

I haven't gotten the cheese sauce from Sam's. It is just so big and I'm not sure I have room in the frig to store it. No way I could use it all at once. I will try the soup some time. Hope you are feeling well.

Way to much work for just me. I cook for me, and tonight I had a mini Boboli pizza. Pizza sauce, the crust, and some mozzerella cheese. I was happy with that.

My grandmother is that way. She welcomes the chance to cook for us all when we visit her. My mom on the other hand, not so much. But she never liked to cook as much as my grandmother did.

I sometimes wish I could get by with that! I know that someday it's going to be just Mike and I here in the house and we're going to go out and grab dinner because it will be easier than cooking and cleaning for just us. (I'm looking at my parents and in laws because this is what they do) and I'm going to wish that the kids were still at home and I had the chance to cook for them again.

I know! I just groaned when she said that's what she wanted because about the only time I do soup in the summertime is chicken and it's in the crockpot. I usually reserve soups and stews and chilis for winter and cold, rainy weather. Sorry you can't have potato soup. That just stinks! LOL I will have to eat some for you. I think there was a little bit left at dinner.

yeah, and the thing I like about potato soup - the way I cook it, is that its vegan with all my allergies, I like to eat a meat free dish at least once a week, actually, I pretty much have to eat one because of the rotation and allergies and the bacon - well, I tell folks, the last 3 times I ate bacon, I went home sick twice and wish I had the 3rd time... bacon is not on my diet at the best of times

I don't mean to be rude and please don't take this wrong but could your daughter be pregnant? I get all kinds of cravings but I have passed the time when I could get pregnant, so I know it does happen without being pregnant but the funny thought popped into my mind when you implied that her request was so odd, wanting soup in hot weather. Sounds like you have a great imagination for cooking. If I was not a vegetarian, your recipe would sound very good to me.

No, she's just spent the last year living out of my house and away from my cooking! She spent 2 months last summer in Mexico on the mission field, then was home for less than 2 weeks before she moved to college and lived in the dorm for a year. The cafeteria is not Mama's cooking! She keeps asking for the things that she didn't get at school. She would come home occasionally on the weekend, and would always ask for specific things. She is also one that will eat potato soup year round if I'll make it.

Oh, this reminds me of when I was pregnant with my second child. I made a new potato soup recipe (my sis-in-laws mom's). It was so good I could not stop eating it. I would get a spoonful to "taste" while it was simmering. I just couldn't get enough of that soup. I think of that everytime I make that recipe.

no, not sure who that is. Hope you will try it. It was very good soup. If you have a Sams Club near you, their Cheddar Cheese sauce that comes in the big can is what I used to make the soup stock. I love their cheese sauce because it's something that you can use a little of, put the lid on, and put it into the refridgerator. I make mac and cheese, casseroles and all kinds of stuff with it.
