What is your favorite vegetable and how do you like to fix it?

I am trying to eat more vegetables and incorporate them into my families meals. I would like to learn some new recipes for doing so. I love brocolli and sweet corn. I like spinach and most other kinds of vegetables. Anybody have some family recipes they want to share? Fresh or steamed? Combined with others maybe.

good question.
Acorn Squash :cut in half and scoop out inside. (save & dry seeds for next year )
place upside down on a cookie sheet(upside down keeps more moisture in)and bake in over about 45 min until fork just slides through skin. Take them out, roll them over. Add butter, brown sugar or honey or both, sal, pepper and bake another 15 min or until meat is soft. Oh, I forgot nutmeg or cinimon.very important. This recipie can also be done in tin foil and open fire.
Parsnips= peel like a carrott,tops & bottoms off , lay flat in baking pan,cook about 30 min and add honey, mandering oranges, sal pepper nutmeg. Bake till tender.
Spinich and Cheese pita sandwitches. Slice pita in half and open up. lay layers of fresh spinich, munster cheese, onions, mushrooms, and optional sprouts. Lightly add It type dressing (greek is good also). Bake about 15 min. Spinich should still have body and cheese should be melted. They arn't bad uncooed either.
For those who like them mushrooms are great in this aswell.

That sounds so good. I love acorn squash. I usually put most of that on before I cook it. Guess If i have turned over like you advise that could be a problem. Haha. The parsnips are good too. My grams used to frie them. I haven't had any since. Pita sandwiches sound good. I love mushrooms. You guys are making me so hungry.

Hi gypsywoman, I thought I was the only one still eating parsnips.
They are my favourite vegetable and unknown in Southern Germany so I grow my own.
I like your recipe but my parsnips are about 6 inches across at the top and about 18 inches long so I need to slice them before cooking. Sometimes I boil them and cover them in parsley sauce. They are also very good in stir fries. When I bake them I wrap them in foil with orange juice. I get so many that I can freeze them and have them all year round,

I am so envious. Parsnips were everywhere in NY but here in Michigan I have a really hard time finding them. So when I do I have them several times in a row.

I like the spinach in sandwichs. Great way to get kids to eat it. Maybe. I will have to try that. Thanks. Scorching green beans. Hmmm. Not sure.

My favorite ones are beans, spinach, lettuce... anything that is NOT eggplant. I'm not very fond of it, and I only eat it when it's fried. Other than that, I love all the vegetables, 'cause since I was a little girl, my mum always cooked with a big variety of them so it was: eat them, or don't eat at all! hahaha
I like them steamed, fresh in a great salad, combined; you name it, I eat it!

I agree. I acquired a taste for most vegetables from eating at my grandmothers. She fixed summer squash which made me gag but she made me eat it. And parsnips I didn't care for at first but I like them fine now. I have introduced my ex- husband to peas and afew other ones that he couldn't stand. Now he likes them. And if I know one is especially good for me I will try to eat atleast some.

Oh dear I shall sound terribly unhealthy, but my favourite vegetables are potatoes! I know they are rich in carbohydrates and therefore not very healthy but what can I say? I love having potatoes which have been served as a jacket potato and I do have salad on the side with it. I do also like sweetcorn and spinach however - it's just that you asked which is my favourite!

Oh no! Potatoes are actually very healthy. They have B vitamins and lots of minerals. I love them! Ghee, go figure. I live in Idaho. Famous potatoes and all that. I love sweet corn on the cob. Spinach is good in salads too. Yum, thanks. Now I am hungry. Teehee

We eat quite a bit here. We just had spinach the other day and I cooked it with a tad of sugar, butter, sea salt, pepper, oregano, and sweet basil. I typically cook all vegetables with my staple seasonings that I keep witchly stocked for such things.
Now, one of my yearly favorites is sweet potatoe pie, and it's best served with just a dollop of whipped topping! I make it the same way I do pumpkin pie, save it is sweet potatoes instead. I also have cooked sweet potatoes with nutmeg, butter, and marshmellows, as well as just baking the entire potatoe and eating it that way with a tad of butter. (Yes I'm a butter person lol).
I love squash as well. Summer squash I stir fry with zucchini. Spagetti squash I bake, and then serve as noodles as I would with regular pasta. It's very good that way. Acorn squash I bake with a bit of butter, sea salt and pepper upside down in the pan.
I love brocolli and typically do that in a stir fry as well. A trick I learned a long time ago when wanting something in place of baked potatoes was that califlower makes a nice substitute.

Zuchinni is a veggie you can do almost any way.
ThereĀ“s the raw zuchinni salad: you cut the zuchinni vey thin without peeling it, add vinegar, salt, mayo, mustard ( the one that has grains) and let it marinate for half an hour at least.
You can steam them in half, take out the meat, fry onion and add an egg, and bread crums. Fill them and to the oven. Add cheese on top.
I also like warm steamed zuchinni with homemade mayo or olive oil.

I am not big on raw zuchinni. I like it in zuchinni bread and baked in things but not raw. I might try frying it the way you mentioned. Thank you.

I would have trouble saying what my favorite veggie is because i love them all. Right now u can get fresh green beans at the farmer's market. I bought some sat. morn & cooked them. I always put potatoes, carrote & AN ONION ON TOP OF THEM as they are cooking. I season them w/fried meat grease, salt, pepper & a little sugar. I made me some corn bread, sliced a tomato, cucumber & an onion & that was my supper. I REALLY ENJOYED IT.

That does sound good. I remember when we had a nice garden and would just pick whatever sounds good and fix it for dinner. So much better than from the store too. Thanks for the response.

I am now in a fix. I know eating more vegetable is good for both your stomach and general health than going all fleshy. There are so many of them but I can surely tell you what I do not like. I do not like bitter gourd and rest somehow make good go.

Interesting. I used to go to a basch restaurant that prepared lettuce with just a plain mayonaise and garlic dressing. It was delicious. Your addition of pineapple is interesting as well. Thanks for your response.

I enjoy carrots, peas, corn, potatoes, green beans, and celery in a nice vegetable and beef soup or stew.
Sometimes there are some tomatoes in there.
Most of my veggies end up steamed or otherwise cooked, but I don't mind the occasional salad.

Interesting concoction. I love a good vegetable soup in the winter. Now in the summer I cut up very fine all my favorites and let them merinate in some italian dressing. Adding afew herbs is nice too.
