I spent 17 years in Louisiana, being from Ohio we made potato salad by using mashed potatoes, eggs and mayo, maybe some pickles. Well my first attempt there at potato salad I learned real quick was not what they thought it should be.
In Louisiana they boil the potatoes, drain, and put in large bowl. To this they add chopped up (as mush as you like in amounts) onion, olives, parsley, add to this a squirt of mustard, some black pepper, salt, dill relish, has to be dill, or chop up some dill pickles, add as many boiled eggs as you like in your tater salad, then the mayo. It is really good and the parsley and olives gives it a punch, from being bland. Hope you like it, please give it a try.

I love potato salad. In fact, I just made some dill potato salad last week. It's not the traditional potato salad rather a chunky, less dressed type. You can find my recipe here if you're interested. http://theessenceofwomanhood.blogspot.com/ It turned out really good.

Hi, my favourite potato salad recipe is new potatoes chopped small with their skins still on cooked with fresh mint, stir it into mayonnaise mixed with olive oil, add chopped spring onions and bacon pieces. I have no idea what Ranch dressing is, is it an American thing and is it bought or home made?

My mother makes the best potato salad. I try to follow her recipe, though she doesn't really have a specific one. One thing she always does is add diced cucumber, not a traditional food in most potato salads, but it gives it a great flavor. For my own, I mix mayo, a dab of mustard, and a bit of sweet pickle juice to the dressing. Yum!

This can be served cold, but it's extra-good when served hot! Add small cubes of apple, walnuts or almonds, and spring onions. The dressing is primarily vinegar, with a little olive oil and just a smidgen of mayonnaise, preferably home-made. If you use a good balsamic vinegar, sweeteners aren't necessary, but I usually add a bit of Splenda. It's simple and amazing, especially if there is a combination of sliced and cubed potatoes.

Potato salad,
Hi there savypat, Potato salad is one of my favorite foods. You can savy it up a bit by adding a few teaspoons full of sugar, if you don't like it very sweet then add less sugar. Also I was short on pickles on time so I used what I had on hand which was some italian mix veggies, which contained a pickled version of cauliflower and carrots and celery. Chipped up all up really fine and the family never did even notice the difference, Just about all of that batch got eaten up quickly. It's amazing the things that can be done with food to substitute when you are missing something. Take care good luck with it...........enjoy!
