Not sure if this will help or not, but here goes.... Mashed Potatoe Donuts Ingredients 3 cups Sugar 3 cups Mashed Potatoes 6 eggs 1/2 cup Vegitable oil 1 and 1/2 cups Milk 8 cups Flour 5 Tablespoons Baking Powder Mix sugar and potatoes untill they are the consistancy of paste Add eggs and beat, add remaining ingredients and mix well place dough on a floured surface and roll out to 1/2 inch thickness, and cut with donut cutter. In a deep fryer, or deep frying pan, heat oil to 370 degrees farenheit, drop in donuts and cook for a minute and a half on each side or untill golden brown. place on paper towels to drain any exces oil and to cool a little.... then Enjoy

Mom used to make them and we called them spudnuts because potatoes are sometimes called spuds. (I have no idea where that came from!) I went looking for recipes by that name. I have never heard of mashed potato donuts, are they light or heavy? I went online and found a recipe, not sure if it contains the ingredients your mother used to use.http://southernfood.about.com/od/doughnutsandfritters/r/blbb717.htm I glimpse at another that called for cinnamin. My mother used to make potato pancakes, from leftover mashed potatoes. Hope you can find the recipe that is similiar to your mother's.
