enchiladas with chocolate mole sauce!

Hey everyone, I'm determined to make cheese and tofu enchiladas with chocolate mole sauce! I was out of town last week and tried this, and it was absolutely delicious. Unfortunately, both Mexican (and I use that term loosely, it's mainly Tex-Mex) restaurants back in my town don't serve enchiladas with mole. Does anyone have any tips as to how you might cook this? Should I bake the enchiladas with a bit of enchilada sauce first, and then make the mole on the stovetop? Or should I cook it all together? I am quite the novice at cooking Mexican food, so any help would be appreciated. Thanks!!

I don't know anything about mole sauce.. but ... how do you make your enchillada sauce? I have been searching for a good sauce for so long and can't find one! I tried all the store bought canned ones and they just don't cut it. The 2 resturants around me that had really good enchilladas closed. So I am in "enchillada withdrawls"!! La Victoria canned is close as I can get.. but that still isn't like those two resturants had... Just something about them that were so good! Got any suggestions on good enchillada sauce? Would sure appreciate it!
