I greatly love Lord of the Rings because of its wonderful plot, screenplay and cinematography plus breathtaking visual effects, however, the author's son maintained that Lord of the Rings cannot be categorized as trilogy because the story just divided in 3 chapters but it is only ONE BOOK.
Anyway, I loved Lord of the Rings and still watched the three series up to now. Next is Indiana Jones followed by the Godfather.

Lord of the Rings hands down is the best trilogy.
Bourne identity was good also, in that each movie was good, but not as special and awesome as Lord of the Rings. Star Wars is up there too, buyt I barely remember them because I saw them so long ago.
As for Jurassic Park, each movie just got worse, though the first one was great.
Terminator had a good first two movies, the second movie was awesome, but the third stunk royally.
I never saw the second or third godfather movies, but the first one was a classic.
So many times movie sequals are not as good as the original. I think that it is hard to make all three work well and fit together.
Oh, another decent trilogy was the Pirates of the Caribbean. Those movies weren't bad, though nothing like Lord of the Rings.

Back to the futureee! :D
Just love this movie, all of the three!
But other trilogies is Godfather and Pirates of the Caribbean (and no more a trilogy, but still counts.)
