Salmon roulettes

Today, when I watch Friends, I am confused about the words, I guess It's a dish, but in the subtitle it translate into a game. It's in s1e18, when they play poker, and Monica bring this to everyone. It's as below
-"Here we go. We're got salmon roulettes and assorted crudites."

Hi! You want to know what "salmon roulettes and assorted crudites" are? It'a dish: salmon is a particulare kind of fish made in ovale-shape about. Crudites are raw vegetables, for example carrots or asparaguses and so on :)

Roulette is referred to their shape :) if you see this image: http://wwff.files.wordpress.com/2007/07/dinner.jpg these are roulettes because they look like circle. pratically, pieces of salmon, circle-shaped :)
