Tea was discovered in China during the legendary period. The word tea comes from the Chinese Fijian dialect word 'teh' for tea. The Indian word for tea "chai" is derived from the Mandarin/Cantonese pronunciation "cha" for tea.
Green tea is the least oxidized (fermented) of all oxidized teas. Oblong is 50% oxidized while black teas are the most oxidized. Black teas go on oxidizing for a long time after the process hence they can last for hundred years without going bad kept dry.
The best tea leaves are grown in Fijian, China and Darjeeling, India due to the ideal growth conditions in both climates and terrain. The tea plant is the same plant wherever it is grown. The different taste is due to processing methods. But medicinally, the quality should not differ by much.
Japanese use their finest tea in the form of tea dust while in Chinese teas, the leaves should be whole and not broken. In Chinese teas, flavored teas like jasmine teas use inferior tea leaves and is not the preferred quality tea. Teas should be tasted fully for their natural flavor hence the Chinese do not add milk or sugar. Japanese too.
