Favorite Enchiladas

I am making enchiladas for dinner tonight and wanted to know what your favorite kind is. I have had 3 kinds-the classic red sauce kind, the green sauce (verde), and then the creamy kind made with sour cream and cream of mushroom soup. I making the red kind tonight, although my way is out of the McCormick enchilada sauce packet with added tomato sauce. They are still a little time consuming to make but so good! Do you prefer to use corn or flour tortillas?

mmm..now you make me want to make enchiladas for dinner. I make mine with chicken and the green enchilada sauce (green tends to suit chicken better, and red beef, just f.y.i.) I also prefer the texture of flour tortillas.
when i make mine i use two cups of shreded cooked chicken, and throw it into a saucepan with an 8 oz block of cream cheese and all the liquid and half the tomatoes from a can of diced tomatoes with chiles added. I let it cook down until the cream cheese has melted and it all turns into a bubbly, gooey mess. Then i spoon it into tortillas, top with shredded cheese (and black olives if i have them) and roll them up, put them in a baking dish, then pour one small can of green enchilada sauce over the top, spread the reast of the diced tomatoes over, then a laver of shredded cheese and any left over black olives (the ones i haven't snacked on while eating them anyways) Cover, toss the whole thing in the oven for about 30 minutes, remove the cover and cook for another 10 or 15 to let the cheese brown up.
Soooo yummy...sooo filling..and soooo cheesy, they are totally probably not very good for you, but who cares, they taste good!

Sounds really good, and I'll bet really rich made with cream cheese, huh? I do like beef enchilads too, but my favorite meat is chicken, and I prefer my enchiladas made with chicken. What kind of cheese do you? (I am guessing jack??) And who cares if it doesn't meet a healthy test? Usually the best foods are high in fat-LOL.

Our enchiladas turned out quite yummy last night. I just use a packet of enchilada sauce and then add a can of tomato sauce to it (as opposed to using the canned version or making it from scratch). I used a cheese mix too-colby jack, which is not the typical kind to use in mexican dishes, but they were great! I made 6 total, and ended up giving one to my father-in-law and another to a friend who stopped by last evening. There was only one left and I saved it for lunch today-even though another friend stopped by and asked for it as he saw it sitting in the glass dish on the counter. I wasn't gonna give my last one up!!

I actually usually use mozzerella, even though that really doesn't go with the mexican theme of enchiladas, but it works (and i usually have it on hand) Though when i think about it in advance, i pick up a bag of the mexican cheese mix, i think it is jack, cheddar and something else,i don't remember right now.
And yes, they are verrrry rich..but so yummy!!

I actually prefer the green ones. With some onion or a bit of chicken along with the cheese. It tastes really good. Now I have enchiladas that were made with corn and flour tortillas. They both taste good but I really prefer flour tortillas over corn so I would go with flour tortillas. Now I've never had an enchilada that was made out of sour cream and cream of mushroom but maybe I will try it one day. It sounds really good. Enjoy your dinner! :)

Do you make your own verde sauce or do you use a can or packet? Oh yes, I guess I didn't mention that mine will have chicken (they always do) and I am using a blend of cheese with cheddar and jack. I prefer using flour tortillas because they roll easier and don't fall apart as easy as the corn ones do. If you are interested in trying the creamy enchiladas, you can find it at Campbell's soup website. I have made them before and they are delicious!!
