Stuffed Pumpkin for Lunch Tomorrow

I bought a pumpkin in the market this morning - about 3lbs in weight. I decided to cook it in a way that I used to cook it when we lived on the farm.
First, I am going to brown stew some pork in a rich gravy containing lots of gasrlic, onions and some pepper and SALT and a little light soy sauce. I will only half cook it or less. Actually as I am using th soy sauce I will not use salt.
I cat the top off the pumpkin and keep. Clean out the pumpkin and deepen the cavity. Then I will fill the cavity with the browned pork and put the lid of the pumpkin on top and tie it down.
Then bake in the over on medium heat until the pumpkin is soft and ready to be sliced. I will serve this with some white rice and a salad. Very easy and quick to prepare. So I am on a cooking roll?
Have you cooked meat this way with pumpkin or done anything similar?

Stuffed zuccini is about as close as I have ever gotten. But not with a pork stew, with a ground beef meat loafy concoction...
Sounds delicious though.

HAVE YOU EVER STUFFE4D LARGE GREEN PEPPERS WITH GROUND MEAT STUFF? iT IS ALSO DELICIOUS. SORRY NO TIME TO CHANGE SIZE OF PRINT.I ALSO DO THIS WITH BREADFRUIT.

It's good u are staying busy. Your dish sounds very interesting, i have never had anything like that. I know i would love the stuffing but have never have had pumpkin anyway but in a pie & i don't care for pumpkin pie. I would sure try it tho. I bet u are a wonderful cook.

I don't do much cooking - unless I am upset and then I just kewep going. Am o.k. now. At work for a few hours.

That sounds pretty good! I don't normally cook pumpkin in any fashion. Though know my middle wll get one from a farm this fall if they take the usual trip to the farm.
Though you never mentioned how high you filled the pumpkin or approx pounds of pork you used.
& lastly...... any left overws for me to try?

Oh gosh, if you have more meat than the cavity of the pumpkin then just scoop out more pumpkin. I am so bad at this - with amounts I mean. I tend to improvise and you can use any lkind of meat you want - even ground. Sorry to be late but have been ill

Yes, two years ago we did dinner in a pumpkin for Halloween and I had a face on it and everything. This year I am having a Halloween party and will be making it again :). It was really good, we used ground beef, rice and some veggies, etc.

Wow, I have never even heard of anyone cooking a pumpkin. That is, except for using the innards to make pumpkin pie. My sister makes those homemade, from time to time. She is an excellent cook.
I am thinking of forwarding this to her and seeing if she might want to fix this for us this fall. She is so creative. It sounds like you are as well.

It tastes so good as the juices from the gravy and meat go into the flesh of the pumplin.

I have never cooked a pumpkin in my life! I've eaten pumpkin pie, but never made it myself, and that's all I've ever done with pumpkin. Sounds interesting. I'd try it sometime, but my hubby is such a picky eater, I doubt he'd like it!
