Cucumbers, Cucumbers!!!!

We have lots of cucumbers that are getting too big to slice and pickle. I need many new ways to use these cucumbers. I am not a person that can waste anything.
This is how I use the cucumbers already.....
bread and butter pickles
dill pickles
kosher dill pickles
cinnamon red hot pickles
spicy hot dill pickles
relish (LOL turned out to be sour rather than sweet)
sliced and eat raw
slicked and put into vinegar and water with onions
sliced and fried like squash or okra
chopped up really small and added to soups and casseroles
I need many more ideas so we can use these up. I am going to slice some and freeze them in zip lock baggies so we can take them out and fry them and I may chop some up for adding to fritters, soups, and casseroles. Hey, just thought of that, that was a good idea.

Sometimes I'll cut them up and use it just like I would zucchini. My favorite way though is to take the peel off, then I run the tines of a fork longways up and down the sides. After that I slice them very thinly. I then put them in a tupperware and add a little mayo, and a little Hidden Valley Ranch dressing. Shake the tupper to mix and it's done. My family and I just love them this way, better so than with the vinegar.
Another thing we do is to make cucumber sandwiches. To do that we take thin white bread,(or sometimes pumpernickel bread) crusts off, and spread it with a thin layer of cream cheese, then add thinly sliced cukes on top, and a wee little bit of finely chopped dill. Yum, that's definitely one of my favorites, I could eat those all day!

I forgot you said peel them and I just sliced them thin and added ranch dressing and Miracle whip and I saw some honey mustard dressing in the door of the fridge and I added that . I cannot stay away from the fridge. I love them! Thanks so much! God bless you!

Do you grow your own?
Sounds fantastic all the ideas you've come up with though! All i can suggest is adding them to salads, pastas, and sandwiches to be honest, maybe i'm not as creative as you! I plan on growing my own fruit or vegetable at some point, any tips?
The freezing them is a good idea though. (;

Yes we grow our own. My son just went and picked them today and brought in 75 pounds that are too big to slice and pickle. LOL so I gotta do something with them. I will be very happy to help you with your garden comes in. Just pm me any time. God bless you!

Sweet cucumber noodles is a dish from Japan I made recently. You can add them fresh and regularly sliced to any meal.
And that's largely all I know...hopefully everyone else here will give you plenty of ideas.
