why do canadians spell certain words with a U but americans don't

Canadians held onto their British affiliations much longer than the Americans. The u addition is the original English spelling. Due to the cultural imperialism of the United States, American spellings have inflitrated the English language. I guess we parted ways in politics as well as spelling.

but the reason it's officially spelled with a "u" is because Canada still (at least somewhat) falls under Great Britain, and the "u" in the spelling comes from British English. Canada uses the metric system for the same reason.

Because that is how it is spelled in Canada. To spell colour, color, is just being lazy.
I think it is because of the strong French origins in our dialect.

That is because when an american goes "on about", they go for a walk or a talk...when a canadian goes "on about", their going canoeing.
