Freezing Zucchini?

What's the best way to freeze zucchini? Is it better shredded w/ water squeezed out? Or do you keep the water? or is it better to freeze in another cut or does it just depend on what you want to do with it. I have a good sized zucchini in the fridge and I don't know if my plants will produce anymore or not + I don't want the one I have to spoil.

i usually shred it and leave the water in-9 times out of 10 i add it to soup anyway,so it's just a bit of extra water.if you use it for anything else tho,i'd leave it to drain in a colander in the sink before use so it doesn't get really squishy.

I'd love to use it in soup! However, hubby & the kids are anti zucchini so zucchini bread or hidden in pasta sauce is my only alternative at the moment.

It depends on what you want to use it for. If you want to make zucchini bread or something like that, shred it, then freeze it. When you thaw it, then squeeze the excess water out of it.
I freeze the larger zucchini for making stuffed zucchini. I split them down the middle and scoop out the seeds, then put the halves into a plastic bag and freeze them. They're really good to stuff with ground meat, noodles and seasonings or with chicken, rice and mushrooms.

Thanks for this!!! I never would have thought of freezing it when it was cheap and I use it in almost every recipe I have whether it calls for it or not--heck, I used to bake it in cookies for my kids!
Here's what I found: "Zucchini – Shredded zucchini does not require blanching. Pick zucchini before it grows too large, rinse and grate with the skins on. Measure the amount and note on the freezer bag label. Grated zucchini can be used to make zucchini bread and squash puppies."
I have no idea what squash puppies are but I'll try to remember to look it up tomorrow. Sounds intriguing!

I have never actually done it, but I read that it is best to shred it and then freeze it. Then add it still frozen to what ever dish you are putting in with out fully defrosting it first. Like I said though I have never personally tried it so I can't guarantee that is correct information. I would like to know this myself though, as I keep buying it to make zucchini bread, and then I never get around to making the zucchini bread and I hate to waste it or let it go bad.
