Hawaiian Potatoes, yummy!

I had a wonderful breakfast. Once again, I have some potatoes to use up--my sister was visiting last week and I bought a 5 pound bag. Now I'm trying to be creative so I don't waste any of them! So I diced up a small potato and threw it in a pan I coated with cooking spray. What I really wanted was Hawaiian pizza but that was out of the question with my diet. So I diced up some green and yellow bell peppers, added a couple tablespoons of diced ham and threw in some leftover crushed pineapple. I cook things slowly since I'm doing so many other things so it took a little while. After 40 minutes the potatoes were tender and I added some salt substitute and 1/4 cup of mozzarella cheese. If you like Hawaiian pizza, you have to try this! It's low calorie and fat, full of protein, fruit and vegetables and you get your dairy and a little fat (which we really do need!). It was so delicious I might have it tomorrow for lunch! Maybe I'll try some lower-calorie Parmesan instead of Mozzarella. Well, that's my idea of the day. I might just have to try this one. I love Hawaiian pizza and I have everything to make it here at the house. I doubt the kids would touch it, so I will have to make just enough for myself.

I bet the kids would eat it if you mashed the potatoes and put the sauted vegetables and ham on top then add the cheese. I forgot if I mentioned onions are an important part of it, I may have left that out. Next time I'm going to mash the potatoes, saving the skins for a treat later. I'll use pan spray to make a potato pancake (mix with a little Egg Beaters to keep it together) with raised sides, kind of like a pizza crust. I'll put it on my pizza pan. Then I'll saute the other stuff in and dump it on the "crust" and top with cheese then bake.

Mmm, sounds yummy! What temp. did you put it on and did you stir/flip it at all or just leave it be for 40 min?

I stirred the potatoes a few times at first and had a lid on the pan with a little water in it. Then it let the pan go dry, sprayed butter flavored no-cal cooking spray on them and the pan. Added the onions, bell pepper and ham and the pineapple went in at the last, just before the cheese. I cook like this on simmer setting. Nothing burns that way!

Sounds very creative! This is something I'd usually come up with, LOL! It sounds delicious and I'll certainly give it a try! How about Canadian bacon instead of the ham? Good Job! tdemex

Thanks! Yes, Canadian bacon would be even better but I'm challenging myself for the next weeks to make use of only what I have on hand--no trips to the grocery. I'm sure I'll have to be quite creative.

Wow that does sound very tasty! I have to admit, I am not too sure what Hawaiian potato is but does it mean that it comes from a specific part of the world? Your recipe sounds great by the way, I might have to give it a try!

I named them Hawaiian because I love Hawaiian pizza that has Canadian bacon or ham, bell peppers, onions and pineapple on it. The pizza crust has so many calories, though, that I rarely eat it and I really craved it this morning. Potatoes were a great substitute for pizza crust and probably a lot better for me, too!
