In my house, if we have extra rice cooked for the day, it will be kept in the fridge, and accumulated over a few days, or sometimes to a week. Reason being the people in my house all love fried rice, and using the cold rice for this dish, will have the dry feel and it tasted better. It's also easier to be fry too. I will put in ingredients like sausages, corn, dried prawn, salted fish and other stuff that I could find in the fridge for this. Sometimes, I fry it with chilli too.. How about you? Do you like fried rice? How do you like your fried rice to be?

Hello cwong77, I love fried rice too. But I normally use overnight rice and not rice accumulated over a few days, more so a week! It really makes a difference if we use freshly cooked rice and overnight rice. For fried rice, overnight rice is always the best! Hence, my parents wont order fried rice when we are eating out as they always say, we wont know how LONG the rice have been kept. What if they keep it too long? So, for us, fried rice is something to be consume only at home. :)

submerryn.. coz I got to accumulate enough rice for frying.. I don't cook lots of rice, and maybe the leftovers are insufficient just for a day or two.. therefore got to keep in the freezer longer... Anyway, I am careful with the way the rice being kept.. Oh Ya, me too don't order fried rice when I eat out.. even those that sell by the stalls too! If I can keep the rice in the fridge for a week.. what else others who need to accumulate much more to serve their customer

Hello Submerryn , I also feel not so good to keep the left over rice for too long, 1 or 2 days are the maximum for me. If I am lazy to fried the left over rice, my mom will just take those rice and pass it to her neighbor, just for the pet dog to eat. Hello Cwong, Yeah, better be careful on the left over rice and not keep in the fridge for too long. If your family love fried rice I give you a suggestion here. Says you want to fried rice on this Saturday, then you got to cook more rice in one day in advance. Then you could have fresh over night rice to cook your fried rice, ! Hi both again, I think I will stop order fried rice if we eat outside, , both of your comments here have made me worry about the left over rice from the restaurant.

vingyan.. thanks for the suggestion.. but I seldom have the feel of frying rice.. once I have enough rice, then I cook it. However, if I find the rice accumulating for too long, then I will be cooking more rice and the rest, together with those in the fridge used for fried rice.. now, should I serve my family members fried rice since I busy with mooncake ah?

I just have going all the time a fried white rice. I only fry it with crushed garlic and salt. That way I can use it in many ways, on the side of dishes that need to be the kings.. Such is the case of my "ají de gallina", a dish made with hens you boil until the bones fall off and then you fry diced onions, diced tomatoes and plenty of hot chile paste. You boil peeled potatoes and you squeeze them in the mixture as soon as they are warm enough to handle. This dish asks for a white rice on the side.. It can also be done with prawns, but they are too expensive for me. And the best is done with abalone but I´m waiting for the millions I inherited in Nigeria to make it. Sometimes, when I´m mylotting and don´t want to keep away from the computer too much, I put some cold fried rice, a can of tuna, shreded lettuce, diced bunch onions and mayo and bring it here to eat and post. Happy posting!!!

marguicha, wow wow.. you are really intact with MyLot ya.. and even able to just have cold rice to sit in front of your PC.. here in where I stay, we seldom take cold rice, and those cold rice will turn into fried hot rice.. or else we will steam it back and then eat with other dishes.. my mum seldom allow us to re-steam rice, and so frying them is the best alternative so we are not wasting.. all the best in the inheritance from Nigeria.. :D

Hello Cwong, Nice fried rice you have there. I can see from the picture, your fried rice is covered with lot of Ikan Bilis ( so sorry, I forgot how to call that in English). Sometimes, we do cook fried rice too. But we really don't have the habit of keeping the extra rice in the fridge. If so, we will only keep for 1 or 2 days only. We don't keep the rice for a week time. I just think of keeping the rice too long time in the fridge is not so good?

vingyan.. if it's only a day or 2, it won't be enough to cook up a dish of fried rice for my family.. so, I normally will also freeze them in case it is not enough.. but never more than 2 weeks sitting in the fridge.. yup, ikan bilis is also another type of ingredient that we like to put in our fried rice...

Hi, cwoong77. I like my fried rice to have eggs, pork, chicken and sausage in it. I also love bell peppers and zucchini in it too. I think some fried squash would be delicious too. If I had left over rice, I would probably find a way to spice it up too.

I like fried rice too, especially for breakfast. We often had left over rice during lunch and dinner but we never stayed the rice inside the fridge for a week. When I make friend rice, I put anything I can put into it like egg, left over fried pork, sausages, hotdogs, etc. It's easy to crushed the rice when it came from the fridge and yes it was crispy enough unlike having left over rice not came from fridge, its a bit wet.

fried rice is not a big meal item in North America. Within the last year I have found out how to cook rice and find it very versatile as a base for a meal. One of the problems is wondering what to do with the leftover rice that after a couple of days becomes dry and unpalatable. I think I will have to try using it as fried rice as it seems to be a very popular dish in other countries. Thanks very much for the information.

The only place I am exposed to fried rice is in the local Chinese restaurants. In Canada most of the time potatoes take up most of the starch component of a meal. In the southern United States the starch component seems to be taken up by an item called grits which I have never tried, it seems to be a processed component of corn. In Italian cooking pasta seems to be the major starch component. One advantage of rice is it tends to be cheap and filling and if one sticks to brown rice it can be very nutritious.

Some Asian can't be happy if they do not take any rice for days. I got a friend went to Europe, and bread was serve everyday, and she was really suffer coz she needed rice.. after spending a month in Europe, the first thing she ate was RICE!

Hi there, I like fried rice too. but I prepare it at home. A fried rice is something that you can enjoy as is or load up with meat and vegetables. Absolutely, a great way to use up leftover rice, this quick fried rice cooks up with frozen peas, baby carrots, eggs, and soy and sesame sauces. Have you tried chicken fried rice?? Chicken fried rice is a healthy, one dish meal. Like all fried rice dishes, Chicken fried rice tastes best when using leftover cooked rice. This is how you can make. Beat the eggs lightly with chopsticks, add a dash of salt (Add a bit of oyster sauce if desired). Chop the chicken meat and dice the onion and green onion. Heat wok and add oil. When oil is ready, pour 1/2 of the egg mixture into the wok and cook over medium heat, turning over once. Cook the other half the same way. Cut the egg into thin strips, and save for later. Stir-fry the onion on high heat for a few moments, remove and set aside. Do the same for the green peas. Add oil, turn down the heat to medium and stir-fry the rice. Add the soy sauce, salt, pepper and oyster sauce. Add the chicken, onion and green peas and combine thoroughly. Serve chicken fried rice with the strips of egg on top and the green onion as a garnish. I hope you will try and enjoy it too.

I love fried rice and I can always eat more than 1 bowl. Fried rice is the most fast prepared food and convenient food to bring along. It is wholesome too. Normally I will use overnight rice too and fried it with mixed vege, egg and luncheon meat. I find that, fried rice can easily turn out to be delicious by adding any ingredients that match with it. Sometimes I will fried it with long bean/ french bean, anchovies, chinese sausage, minced meat and etc. For kid, fried rice is easy for them to eat well mixed with meat and vege. I always opt for fried rice for my boy when we eat out.

I love fried rice especially in the morning accompanied with dried fish or fish cooked in vinegar and a cup of coffee. It is usually made from left over steamed rice, I fried it in butter or margarine, put garlic and onions with it. I throw just anything on it ,too like , shrimp, fried egg, sweet corn kernel, green peas, bacon and even canned tuna.Putting spices like turmeric and cayenne powder add flavor to it, too. I enjoy it best when it is steaming hot.:-)

Hello, friend. I am the favorite fried rice, the rice Refrigerator because of speculation out of the rice grains are plump and will not stick together. One thing is that oil, it is best to use lard, fried rice out, it was very, very fragrant. In addition to those side dishes you say, you can also put points leaves.
