Hello my dear vathsala30 Ji,
We are North Indian with pure vegetarian back-ground. We never use garlic/onions in our kitchen. But Ginger is used for preparing tea at all times in addition to many other places for preparing curry. I kinow, if garlic was smell-less, would have been taken more than gold. It has lot many qualities to save many diseases. But we do not use. at all.

Even we prepare Adharak ke Chai along with little cardomom, clove, cinnamon or sometimes with lime grass and some times masala chai to which we add a little chai ka masala which I prepare at home. Thanks for responding Bhahenji. Aapko aur Aapki parivar ko nayee saal ki mubaarak ho

Yep, I enjoy a lot adding garlic and onion to my dishes. When I prepare fried rice onion is a must. Also garlic is very good for health, not only tasty, so is perfect when I prepare meat.

You are right. Fried rice definitely needs garlic, onion and i even add some spices to give extra flavour. Garlic controls BP and helps in producing milk for the new mothers.

All the three are very good for health, that is all I know. But I heard that people who do yoga should not eat onion and garlic, is it true? You have any idea? A particular caste people don't use onions and garlic.

Yes indeed, all the three are extremely good for the health. Garlic will control the BP, onion if chewed raw checks the tooth ache or gum swelling and kills the bacteria. Ginger helps for digestion and removes gas and indigestion from the stomach. I do not know about whether the people practicing yoga should not eat onion or garlic. If at all I happen to meet any yogi, i will confirm about this and let you know. Yes indeed a particular caste people don't use onions and garlic

Hi, vathsla30. Yes I do use garlic and onion in my foods when cooking. Mainly I use these on my meats and eggs as a seasoning. I hardly use ginger. I may have to use this when I am baking something sweet. I think that a few of my seasonings may have this flavor in it, but I am not that sure. Garlic and onion seasonings brings the foods texture out.

may be they like the smell and not the taste and that is why they can not use it. But I like its smell and use it too whether in public or private. It is very good for health. It can be used as a medicine too

Normally i use all the three ginger,garlic and onions in my regular dishes.
I dont like ginger that much.But i love onions and garlic a lot.
Mostly my food i add these.Its so tasty.

Since these items are healthier ones, I try to make use of them to the extent possible. But it cannot be used for all items. Mostly side dishes for rotis, puris are ideal for making use of these items. Then for mixed rices like pulav, biryani can take these items. You seem to be a good cook vathsala30. Why not a get together in your house for all mylottees?

I use it all the times for all my cooking. At this present i also add herbs like lemon grass and parsley to make the dish even smelling good and taste nice.

We have lemon grass in our Garden. I make juice out of it by crushing it in the mixer along with 1 glass of water, lemon juice, sugar and a little ginger juice for good health

I make spicy potato curry, spicy cauliflower and potato curry, chana masala and chole as a side dish for chapati and poori. spicy mixed vegetables,and varieties of curries and raithas and parathas, sambars, rasams and soups. I can make Rasam out of neem flowers, which is not only tasty but good for health, good for Diabetic patients, and kills intestinal worms. We can mix it with Rice or we can drink it like soup. For Breakfast i will make Idli, varieties of dosa, varieties of Uppma, and Pongal, for which coconut or onion chutney will go well.The list goes on like this. There is no end lest you may be feeling bored.

Hello Vathsala,
I know nothing about the North Indian cooking or the South Indian cooking. But for sure, Ginger, onion and garlic are so useful in my cookery .
Garlic is normally used in our daily dishes. We cook vegetables with garlic, some times, we do use garlic to cook some pork too. Garlic makes the food more fragrant. I like to add in some ginger to my dishes too to make the food more tasty. I took a lot ginger when I was on my confinement month. It is believed that ginger can make the body warm.
Lastly, onion is used when I cook soup. I normally add some onions in my soup. Sometimes I fry the onions before add in the soup.

Hi again,
I cook tomato soup too. My kids like this soup. Beside tomatoes, I put carrots, potatoes and some onion and cook everything with pork rib. We called this soup as ABC soup.
I never know ginger is good for digestion. But my mom do tell me that take too much of ginger will cause constipation.

For tomato soup I too add onion and carrots with a little cinnamon and clove and pressure cook. Then i will strain, add salt again cook for 1 minute. Then remove from the fire, add fresh coriander leaves, bread crumbs fried in ghee. This is my way of cooking Tomato Soup. We do not take NV. Not even egg. How do you cook Tomato Soup?

I too add onions to my soup but not to mushroom or sweet corn soup. Only for Tomato Soup. For Pulao, i use ginger-garlic paste which while frying gives a nice aroma. Garlic is supposed to reduce our BP while ginger helps in digestion. People who suffer from loss of appetite and indigestion, should take ginger juice made of raw ginger juice, boiled with 1 glass of water and a little jaggery for a while and strain and drink adding a pinch of salt. Immediately a belch comes. That means the juice is digested. After some time simply we feel hungry

No I do not use ginger, garlic and onion in all dishes, especially I avoid using them on certain specified days also. I use them only when I am making a side dish for chappathi mainly.

I also use it for the side dish for Chappathi and Veg. Pulao. My ML do not take them. So whenever she is around, we wont cook garlic and onion

I use garlic and onion quite often when I cook, but I don't usually use ginger. There are only a few recipes that I use that call for ginger. My brother is more of a gourmet cook, though, and he uses all three depending upon the recipe.

ginger is a good appetiser. For the indigestion problem, just crush it add 1 cup of water, little jaggery and boil it. add 1 pinch of salt, strain the concoction and drink. you will get one belch and indigestion is gone. For any spicy curries, simply paste, ginger, garlic, green pepper, onion, tomato, curry leaf, fresh coriander leaf and fresh coconut, and fry this paste with little oil and then add single or assorted fresh green vegetables,add salt and turmeric powder and cook dry curry. this goes well with any rotis, dosas(pan cake) chappati and sandwich

Garlic is very good for health. it checks our BP, removes gas from the stomach and helps producing milk for the nursing mothers besides it is very tasty. We can make garlic masala powder also. It easily goes well with all the vegetarian and NV dishes. I like Malabar garlic which is very big and can be eaten just like any other vegetable

I totally agree with you. Even for me i need it every day. I can't imagine my cooking without these things. I need green chillies, ginger, garlic, coriander leaves, curry leaves and fresh coconut so that I can prepare a proper breakfast, lunch and dinner

Ginger, garlic and onion are staples. I always have them and I always use them, however I bleleive that there are a lot of aromatics that get overlooked because of the populartiy of these three. Celery, peppers, leeks, and fennel can all make things taste great if you use them for the right things.

hi vathsala30 I use a lot of onion and garlic in making my favorite italian pasta dishes, rather I did before we lost
our apartment now I eat here with the others in Gold Crest
a retirement center. i have never used much ginger although
I know it is really good for us too as is garlic. we americans
love our pasta with plenty of garlic in it.

I use onions in all my dishes because first of all it is very tasty in a food while frying it deep brown then it brings aroma, and ginger and garlic are very good for health too so I make sure to use this combination in all my food while I cook. Garlic is best to control Blood pressure and ginger is good to help digestion.

I can´t cook without onion and garlic. And I don´t know the indian cuisine although I have eaten it a couple of times and find it wonderful. As for ginger, I use it in some dishes. In my country fresh ginger is hard to get and not very cheap. So it´s not worth it.

I use garlic a lot in my cooking, I think it's a great addition to most dishes. I also like to use some crushed black pepper and various herbs to give the food more flavour. I should use onion more often in my cooking though. Having a good spice rack and a good herb rack is a must in any kitchen. Cooking with natural ingredients is so much tastier and rewarding than putting processed food in the microwave or oven.
