Applesauce or other mashed fruit can be used as a replacement for eggs and soy milk works as substitute for regular milk. You can get vegan egg replacements in health food stores, but the applesauce or mashed fruit works fine if you can't get to one. There are a variety of vegan cheeses out there, they can be found in health food stores or sometimes even in regular supermarkets.

I was going to make rosettes, it's the same recipe you use to make elephant ears.
1 C flour
1 C milk
1 egg
1 tsp sugar
and
oil to fry them in
so I could use the soy milk and bananas...would that give them a banana taste?
it can't be bad...I'll have to try this and see how it works out!

I have often replaced margarine/oil with applesauce. It doesn't change the texture that much and is very healthy.

Milk can be substituted with soymilk, almond milk, rice milk, etc... The recipes usually turn out the same.
There are plenty of egg replacers or egg substitutes at natural foods markets.
Cheese can be omitted or replaced with nutritional yeast or vegan cheese, available also at most natural markets.
I would recommend trying your local natural foods stores, or try Trader Joe's, Whole Foods, or a store like that if you are unsure.

apple sauce can be a replacement for eggs or oil. I do not know about cheese, my suggestion would be to leave it out.
