pickling peppers

I have a pepper garden with jalepenos and spicy banana peppers. I read online how to pickle them by boiling them with garlic, onions, and vinegar. Upon trying this a few times however, i've found out it creates sort of a toxic atmosphere. My family members don't appreciate their eyes watering and noses running and I feel guilty every time it's time to pickle the peppers so they won't go bad. Has any one else had this problem or do you know of another way of pickling them? Any advice would be helpful, I am still just starting out in gardening.

I have never boiled the peppers in the vinegar, but put the pickles and other ingredients in a jar and pour boiling vinegar over them. If you're processing in a boiling water bath, the peppers will be boiled while processing. I don't know if this works for the refrigerator kind, though.
