Recipe for celiacs

It is well known that celiacs can not eat food containing wheat, barley, rye, oats or products derived from these cereals. you can choose not to eat any bread, and limited to only eat the foods allowed, is an potion. But if we assume that celiac disease often requires restrictions of a permanent character in the feeding. The celiac can take all kinds of foods that contain gluten in their origin: meat, fish, eggs, milk, gluten-free cereals (rice and corn), legumes, tubers, fruits, vegetables, edible fat and sugar. I left a very rich recipe Lentils with cream ------------------ 400 gr. lentil 16 shrimp 3 cloves garlic 2 tablespoons choppped parsley 1 small glass of liquid cream 1 large onion chicken broth pepper salt How to prepare? Very easy, the night before put to soak lentils. The next day put in a pan the onion peeled and cut into 1/4, garlic and a tablespoon of parsley. cover with water and cook for 1 hour. Once cooked, drain the water, reserving the onion and garlic. In another saucepan, boil 2 quarts of water with chicken broth. When a boil, add lentils that we had to soak the night before, along with the onion and garlic. Afeter the lentils well cooked, remove from heat and grind in a blender until a smooth cream. then add cream, salt and pepper, mix well and let everything simmer 10 minutes. Sprinkle with parsley, garnish with cooked shrimp and serve hot. It's a recipe suitable for celiacs, but as you can see is very tasty nutritious, rich in iron, als ideal for consumption bye childen and women in gestation period. Ideal for the winter season. I thought it was only wheat that celiacs had to avoid.

Celiac disease or celiac disease is an autoimmune disease characterized b chronic inflammation of the proximal small intestine caused by gluten, especially some of its components, Gliadin. Gliadin present in wheat, oats, barley and rye, this destrous the villi lining the intestine.

I donĀ“t know anything but the name f that illnbess as none of the people near me have it. But you mention rice as a source of carbohidrates that can be eaten. There are lots of wonderful dishes based on rice. And now that you live in Mexico, you are aware of the many kinds of dishes that are made with corn (starting with the tortillas). And how about potatoes? Can they eat that? If they can eat that, they can eat wonderful dishes without having to miss the others.
