I'm using Canon EOS 350D for about 4 years and I am very satisfied. Yeah I would like to have something like EOS 5D Mark II but it's a lot of money.
I think as a novice, You should have nothing to expensive from Canon or Nikon DSLRs and maybe reconsider buying additional lens and flash. And you won't run away from the upgrades, if you really get into taking pics (new lenses etc.).

One of the most stable DSLR has been Nikon D80.
You need not worry about upgrading your camera body, unless it malfunctions, be it NIKON or CANON.
As for the best...........................every photographer has his or her own favourites and shall brand them as the best.
Neutrally speaking..................as far as the camera body goes the NIKON is better than CANON especially in the lower range. In the higher range there is nothing to choose between them. Both NIKON and CANON has some of the most versatile brands.
Once you have a good camera body invest on really good lens. Do not buy the usual KIT lens. Buy the body seperately. Then buy a lens or lenses, as per YOUR needs. Even some of the SIGMA lenses are great.
One thing to remember is this: A DSLR is a dedicated to STILL photography. Some of them, like Nikon D80 can take reasonable good videos. But Adding too much functionalities to a single device also makes it a tad less stable. So do not try too opt for one like D90.
Buy a specialist Still camera be it NIKON or Canon.
ALL THE BEST

Canon is worth your money if you are looking for a quality outcome. My dad have been using Canon since he is a teenager (the old ones not DSLR).
