Crispy hot chips

Hi myLotters, I made hot chips/fries to have with dinner last night and while they looked great, they were soggy. Why would that be? Is it because the oil was not able to get hot enough in a fry pan? Does oil get hotter in a traditional fryer? We very rarely eat fried food, but I thought the chips would be something special to have for a change, so I was quite disappointed that they weren't crispy. Any ideas?

It probably didn't get hot enough like a fryer would. If it got that hot it would spatter everywhere out of your frying pan. Sometimes too, if you cover the pan, that will keep moisture in and make the chips soggy.

That's true. I dont recall there being a great deal of splatter so it probably wasn't hot enough. Thanks for your response.

Hmm... This is a trick, try it. When you fry, make sure the oil is too hot, when you put the fries there, sprinkle cold water a few times, it'll make it crispy. By the way, how did you make the chips?

Thanks laydee. I cooked them in the frypan, but we do have a fryer so I think I'll pull that out next time and try your trick. Thanks!
