Mom Diagnosed Diabetes - Looking for Low-Carb Recipes

My mom recently was in the hospital - the reasons are far too involved to get into but the medication they put her on took her from pre-diabetic to just diabetic so now she is really trying to watch what she eats but is very confused. My plan is to make her a recipe book as a Christmas present with various low-carb recipes in them compiled from different sources tailored to fit her likes and needs. I have a bunch of recipe books from the library I intend on using but I was wondering if anybody has any interesting recipes they'd be willing to share with me. Maybe even some neat holiday recipes - Halloween, Thanksgiving, or Christmas? Or even as far away as Easter? Remember, we are thinking low-carb. If you having something you'd REALLY like to share but are unsure of the carbs, post it anyway and I can look it up. :) Thanks ahead of time for any suggestions!

It's the sugar that is more of an issue than the carbs. She needs to learn which foods are more likely to raise her blood sugar. There is all sorts of stuff on the web from reliable sources like doctors and the diabetes association.

The doctors told her that she can only have 60g of carbs per meal. And we are both carb lovers so I am trying to help her come up with something that will fit the less that without her having to repeat it every single day. Hence, low-carb recipe book.

We have talked to doctors. They told her she could have 60g of carbs per meal which is why I'm looking for low-carb recipes. Here's an example: mom loves baked potatoes with lots of stuff on top but one potato has 60g of carbs let alone what she wants to put on it and the other parts of the meal. Our dilemma is that both of us love carbs, I want to lose weight - and she wants to keep her blood sugar down. Damn you carbs for being so damn tasty!!!

need any info on any aspect of my disease I go to the American Diabetes Association on line and they have an ebook'
of recipes for diabetics that you can download free. so just
go to american diabetes assoc.com and get some wonderful'
help.

very sad to hear that your mum got diabetes. my father got diabetes for the past 11 years. i cant stand seeing him getting weaker and weaker. by the way, if you want recipe for diabetics you should search it squidoo.com. go to the page and search for the recipe, trust me there many of them there. also, because your mum is at an earlier stage of diabetes you may want to know that some people found that vitamin c can help people with diabetes, maybe you want to check this out - http://www.squidoo.com/lypo-spheric-vitamin-c . wish you the best..

The two sites I would try are splenda.com and the American Diabetes Association web site. I also go to cooks.com and type in the key words diabetic or sugar free.
The actual address for the ADA is www.dlife.org
