Do you marinate it? Do you just put salt and pepper then grill it? Do you marinade it for overnights? I put garlic powder and onion powder 2 hours before i barbecue the steak. But if i will marinade it overnights I put a little soy sauce, lemon juice, garlic powder, onion powder, oregano and pepper. I put also a little sugar for i have two children and they love barbecue in the sweeter side. Can you share the mylot world on what you put on the meat before you grill it?

I like to sprinkle coarse salt, garlic, fresh ground black pepper, and red pepper flakes on both sides of the steak. Then I rub into the meat and let it sit for at least 10 minutes before I cook it. When I marinade steak I like to use Italian salad dressing, adding the red pepper.

Main ingredients I use for grill are Garlic, ginger, lime, pepper and salt, when the grill is half cooked I apply Barbeque Sauce and give a final touch.

I'm not good at marinating the meat, whenever i put some lemon juice on it and let it marinate I then find out the lemon juice 'cooked' the meat and it's become hard! I never learnt how to marinate properly.
On my steak I usually 'play' with herbs, I adde, rosemary, sage, thyme...
