Healthy living, healthy eating

We are trying to get healthy around the house here. My biggest downfall is starches. White bread (I dont like wheat or grainy breads)potatoes, pasta and rice (we started eating brown rice).
I love vegetables and have changed the setup of our dinner plates. Instead of meat, big starch and little veg, we now have alot of veg and a little starch.
I am looking for more interesting ways to watch what we eat. I am the only one in the house that wants to so it cant be very invasive. I am switching out condimenst with fat free, bought lite hot coco etc.
Any other suggestions? By the way, I dont eat seafood so thats out!

My husband was recently diagnosed as a diabetic, so I am adjusting our eating lifestyle as well. The best rule of thumb so far is to not eat 2 starchy foods at one sitting, like corn & potatoes. We have found flat buns which are multi grain or wheat which are delicious, but with only 9 carbs each. We have switched to light wheat bread, no sugar jelly & splenda instead of sugar. Desserts are a No-No to have in the house now. We eat a salad with breakfast & lunch, a good dressing is Red Bull Italian-- very low carb and low fat, but very flavorful. We have removed the butter/margarine from the table and I only cook with cooking spray. We limit the pasta we have. He is suppose to have only 7 oz of meat a day, but is is more like 10-12 that he is eating. For his condition, it seems that the volumetric diet is the best, with is dividing your plate into sections 1/4 meat, 1/4 starch & 1/2 with fruits & vegetables. Sneak in veggies & fruit that are higher in fiber content. Good book to aid in figuring out carbs & fiber is the Calorie King.
In 4 months, following his dieticians advise and using his medications, my husband has dropped 60 lbs.
