How Can I edit a scanned page quickly so that I do not have to reenter all information again?

technically speaking, thats not possible. but if you are referring to making that scanned page to a form, you can use Adobe LiveCycle, but you can't save it to a file.. its pretty much type and print..
use pdf to word if you really intend to make modifications.. unfortunately, not all conversions are usable..
