you can pull the rest of the chicken off the bone and make a small pot of soup. you can also take and make a stir fry especially since the chicken is already seasoned and cooked. either way it's minus the things you don't eat but not minus the flavor. your family or whomever you're feeding won't even know the chicken was leftover

Well you could make a chicken mandrine orange salad, with greens and cherry tomatoes, and any other veggies that you like, and for dressing a nice Raspberry vingrette.

You could make chicken salad for sandwiches. Chop up the chicken into very small pieces add some diced celery, pickles, maybe some chopped onions. Add mayo and put on rolls,buns or sliced bread with tomato and lettuce or put it in a salad with lettiuc and other salad fixings.

Do u like chicken salad? That would be a good way to use your chicken up . I was going to suggest a homemade chicken pot pie but since u don't eat anything w/flour i don't think it would be good w/out a crust.

hi there! what I like doing with my left over chicken like roasted, is turn it into a pizza. I know you don't like flour but you can also try pita bread or whole wheat bread as your base/pizza bread. I love putting a lot of topping in it and cheese. You can also try it with garden salad, just shred the chicken's meat and combine it with your favorite salad dressing.

Since you have so much chicken left over, I'd suggest chicken pot pie. In fact with a pound of meat, you could probably make two or three pies to last for several days.

I would make a chicken and vegetable soup with it. All you have to do is cut it up into bit size pieces, use chicken stock, and add vegetables that you like into a pot and let it all simmer together. I like to add peppers, onions and garlic into the mix.

Since you don't like grains how about putting it in to a vegetable and chicken soup. You could also mix it with masala and a little cream and a little butter that would be delicious. If you eat potatoes you can serve that with or over mashed potatoes or even on top of a baked potato. Or mix it in to a stir fry with some vegetables and soy sauce or a Tereyaki sauce. I like to but the good tereyanki sauces with big chunks of ginger in it. It is so good.

me peronally i would chop it up into a salad... I loe cesar salads and im always tossing chicken into it..

Cut it up and add it to a salad... you can use it as part of a chef salad with hard boiled eggs, ham and cheese or mix it with green apple chunks, celery and mayo.
Without grains I'm kind of out of ideas I don't think I could survive in that lifestyle, unless it was a medical necessity so kudos to you for that.

Me too. I am going to make rice and veggies with it tonight. Tomorrow we might cut it up over salad. Then chicken salad.
