i'm constantly thinking of ways to make a bunch of different recipes all with the same base. in other words i'll think about chicken and then i think of all the things i can make with chicken. or i'll go look in my cabinets sometimes for thirty minutes and come up with a combination that i haven't tried before. my children love it when i experiment because for the most part it's always good. ask me a question and i'll help you figure out what's for dinner.

The only thing I have not cooked yet that I would like to try to make is a soufle. I would like to make both a savory soufle and a dessert soufle. I don't know why I have not attemtped to learn how to make soufles yet, I guess it is the fear of them falling like you see on television all the time. but I will take any pointers I can get on soufle.

That's a dish that people seem to think is difficult. Just make sure when you beat your egg whites that you don't over beat them. Find you a recipe that sounds good and try it. Make sure you fold the egg whites into the white sauce once it has cooled slightly. Your white sauce should be thick and smooth. To insure a smooth texture make sure you heat the milk that you will have to add to your flour and butter mixture. Just find you a recipe and remember these pointers.

Being from Louisiana, when we start to cook we usually start out with the same base, as for how long you cook it depends on the color you want it to be when you finish, longer you cook it the darker it gets. Then I add my meat and go from there, I am always looking for something new that will change the taste a bit, get so bored of the same thing all the time. You can do just about anything with chicken. Have you tried to take the chicken and cook it till the juices are out and to this add bell pepper, onion, garlic, parsley, salt, pepper and what ever else you want, add your tomato sauce, and make like a red gravy. Cook your speghetti and put this over it, it is excellent. We call it chicken speghetti and everyone loves it. I use the internet a lot to look up different dishes, sometimes they are so good they are asking for more, sometimes they are horrible. What seemed like it would be good turns out to be a bit too much for my taste.
