I saw this Chinese lady chef one time at BBC Food and I took her fried rice recipe. I tried it at home and everyone loved it. Medium brown garlic, spring onion, eggs, cut sausages, salt and pepper to taste, olive oil, minced carrots, green peas. Hmmmmm, delicious to eat.

That sounds great. I sometimes add an egg and some other vegetables to make fried rice dishes.

There is an adorable stray dog in my neighborhood. I usually feed leftover rice to the dog. When I don't happen to see it around, I microwave the rice with a little water so that it becomes soft, let it cool and mix it with yogurt (curd) to make curd-rice, seasoned with salt, chopped coriander and a hint of ginger. Tastes good when served chilled with Indian pickle made out of lime or mango. I love having this for lunch in summer:)

Leftover rice is a good vehicle for many recipes. The obvious one is Chinese style fried rice, with scallions, veggies, soy sauce and egg. Rice salad is easy, with red peppers, other veggies, vinaigrette and/or mayonnaise dressings and seasonings. The Italian aroncini (rice balls) is good, stuffed with mozzarella, or sausage, beef, or any desired filling and fried and sauced. Leftover rice can be put into soups or stews. It can be made into rice cakes and sauteed, along with other veggies and binders. It can be made into rice pudding.

If you don't think you will use the rice for a few days you can freeze it. When you want to use it just bring some water to a boil add the rice turn the fire or heat off. The rice will thaw and get hot very fast. Drain and use as you would fresh rice. don't leave it too long or it will over cook.

oh~ it reminds me~ i put the cold rice and cook it with fried garlic and add it with olive oil with the oily taste, put a little pepper, and chili! it would be sooo good if you pair it up with Adobo or Tocino! whoo! im getting hungry right now! you make my mouth water!

You can try pan frying left over rice with eggs, garlic, green peas and sautéed shrimp and button mushrooms. Touch of salt of soy sauce. It's great for breakfast.
