Well there are many things you can make. Like enchiladas!!
Cheese enchiladas: cut onion shredded cheese of any kind and you have to put the tortillas through hot oil but just for about 10 seconds on each side take them out and put cheese and onion or no onion if you do not prefer and rool them in like tacos serve with some rice and beans and you are ready to go.
Chicken enchiladas: cut green onion and shredded chicken of any kind and shredded cheese the melting kind is better and and mix together and you do the same to the tortillas you put them in oil take them out roll it all up in there and then put them on a plate add extra cheese on top put in the microwave till cheese melts and take out put rice on the side and get to munchin!!! MMM Yummy I want some now.
Tacos: make ground beef with little potatoes add some taco seasoning and chop up lettuce, tomatoe, onion, mm and if you mix the lettuce, tomatoe, and the onion and add salt and lemon to it OH MY GOD it is delicious when you add it to the taco!!! you can also make the tacos with chicken instead of ground beef!! And its delicious that way too!!
Enchiladas: Heat up one side of the tortillas on the stove then flip add shredded cheese and fold and keep cooking. You can also make 2 enchiladas at one time by adding alot of cheese to the whole tortilla and putting another tortilla on top of it then flip all together at the same time while it is getting warm then when it is finally melted you just take the tortillas apart and you got 2 or you can just eat it like that.

My son-in-law gets tortila shells every week, and sometimes we just have an over-load of them lol. What I do is make a treat for my grandson and I. I take the shells and run a pizza cutter and divide them up into the little triangles (kinda like cutting pizza slices.) Then I lightly brush a little cooking oil on both sides, just a touch, and lay them on a cookie sheet. Then we sprinkle some of our favorite spices on, lightly, over all of them. I bake them in the oven until they just turn a little darker, then add shredded cheese over top and return to the oven until the cheese melts. Once that's done we put them in a bowl and either add a sprinkle of mild sauce over them, or add sliced black olives, a little sour cream, etc. They're good, and one of our favorite snacks. Sometimes it's just the cheese, other times the cheese and hot sauce, and sometimes the works. Easy to make, quick, and sooooooo good lol. Kind of like homemade doritos in a way, except we like these better:)

It's given me lots of good ideas. I'm in New Zealand and Mexican food took longer to get here than you'd think... but I just bought a nice big pack of tortillas the other day planning on making chicken enchiladas with them. However, now I've got a raft of great ideas, and I am thinking I'll be buying more tortillas soon.
I do have some corn meal here that my daughter-in-law left with me when she and my son moved to Mississippi in April. It's quite coarse... do you think I could use it to make corn tortillas with? Or should I just stick with the flour. I never asked her what she used to make with it... (she is American).
When I was in USA for their wedding, I went to Taco Belle and really enjoyed it! That and other Mexican restaurants. It was fun eating at places I'd only *heard about* previously!

Hi Niah, I am not famaliar w/the dish u made but i bet it is good. I don't know if u like taco salads or not but i love them. U can bake the tortills over a bowl so it will come out shaped like a bowl. refried beans in the botton. lettuce & tomatoes on top of that, sour cream, browned hamburger, taco sauce, cheese on the top & u have something good.

How about making up a batch of breakfast burritos. Simply scramble up some eggs, fry up some bacon or sausage, throw those and some cheese into a tortilla and wrap it up with some suran wrap, put it in the fridge, then if the kids or someone else in your family want one, simply have them warm them up for about 30 seconds in the microwave. It is a great way to have a quick breakfast.

i just mixed hot and spicy canned tuna and plain mayo and put it in the tortilla then placed it in an oven for a short time .

I usually make tacos every Tuesday, if I have a lot of left over tortillas and I need to use them up I will make Quesadilas. Just really easy ones a little hot sauce, some cheese and then I pop them in the microave to melt the cheese and fold over and cut in half. Always yummy. They also make really good peanut butter and jelly wraps.
