How do you actually make basic fried rice?

I love fried rice! I could live on it! But I don't know how to make it. There must be some variations of it aside from adding the diffirent meat products. I've always wondered how you actually make it. Do you boil it and then fry it, and add onions and stuff? It must be really good for you cooked in a low fat oil. i've never got it to come out as good as they make it in the chinese shops.

okay, there are several variations. i grew up on the basic chinese style which is simple fried rice with some shoyu and carrots and peas. my husband taught me his japanese style which is really good and very filling and can be considered a meal in itself.
First you'll need a rice cooker. it's the best to cook rice anyway. no stove top if possible. if you like rice so much, a cooker would be essential anyway since you just press a button. But most fried rice's start of with day old (or somewhat dry) rice.
So for my husbands one (but my variation of it)...
the portions are totally up to you to decide, some people like more meat some like veggies.
MEAT:
Hot Dogs
Portuguese Sassage
SPAM
Bacon
VEGGIES:
Cabbage
Onions
Green Onions
...all ingredients diced up
You'll also need
Eggs Fried
Teriyaki Sauce (1 part Shoyu, 1 part Sugar, 1 part Mirin - i like it a little on the sweet side)
Shoyu
Pepper
Oyster Sauce (this is key for flavoring)
Start off with frying the meats in a little bit of the teriyaki sauce. not too much of it or the sauce won't evaporate before the meat is finished cooking. once the meat is done drain the oil from it. it's okay if some of the sauce goes as well since the flavor should already be incorporated into the meats.
Add the onions and let cook for a little bit. Then add the day old rice. keep it on low while you're mixing or the rice will burn. Mix a little of the shoyu (or teriyaki again) with some oyster sauce in another container. then slowly add it to the rice mixture until nicely coated. stir it well then add the cabbage. stir it into the rice and keep it on low, cover and let simmer for a while to cook the cabbage. In another pan fry up your eggs (scrambled) then place to the side. Stir your fried rice and TASTE to make sure you didn't put too much or too little flavoring. Add pepper if you want, then turn off head and stir in your eggs and green onions.
It won't be the chinese style where it's really dry and flaky, but it should be wet enough to scoop with an ice cream scoop and keep it's shape.
it's good. i normally eat it on it's own or put an over easy egg on top. when my husband makes it he pairs it with his teriyaki chicken with it's thick teriyaki sauce. it's great. he made me addicted to it and that's pretty much the only type i make now.

if you're worried about the day old rice it shouldn't be a problem. I've never made rice on the stove before (always had a rice cooker) but if you cook rice and place it in the fridge it should be fine the next day. If you're really worried then just make the rice a little more dryer then the regular sticky rice.

Thanks for the very detailed comment and for the suggestions. I will definately try all the recipies mentioned here and I think I will try and get a rice cooker too. Thank you I will let you all know how I get on. One thing tho, I am pregnant and apparently not allowed to eat food over two days old, is fried rice going to be safe enough and is two days long enough to leave it. Thanks

I have probably heard thousands of different recipes for fried rice, and they all seem tasty.
In my case I boil it, then stir fry some veggies, and then add the rice and fry it all together. Sometimes I will add an egg, but it makes the taste to be different from the one in chinese restaurants. I like it, anyway.

Thanks, tonight I made a recipie a bit like yours with egg and veges and I boiled the rice first. It came out a bit wet even though I drained the rice but Ive put some leftover rice in the fridge to cook tomorrow because I hear it is better the next day!!

Hi there. We actually cook fried rice with our left over rice(dinner). In the morning my mom usually served us with fried rice. My mom usually saute onion and garlic in a hot frying pan then the left over rice added with soy sauce, MSG, fresh egg, and other viand left like fried fish or pork. Our fried rice is simple yet tasty.Yum! Now, I'm starving. You can find good recipe online. Why don't you experiment your own fried rice made of left overs and add some vegetables like carrots or green peas. Happy cooking.

The way my wife makes fried rice is the best! It is very unhealthy but delicious. She boils the rice in a saucepan until the water is absorbed. Then she fries up some bacon and mixes it with scrambled eggs. Then she mixes in the rice. She uses a vegetable oil, it is really yummy served with soy sauce.

I think it is very important that you should use leftover rice. It sounds funny, but trust me, leftover rice can make the better fried rice. And usually we will add some ingredients such as fried egg, BBQ pork, fried peanuts, spring onion and so on. Then it will be very delicious.

Yes, need to boil/steam rice first, then fry them with oil, when it is 50% ready, put your favoriate vege or meat mince, continue stir fry until it is ready :) Yummy...
If it is fry, of course have to put oil. You can choose oil with less fat, not a problem.
