The females I think can play anything are:
Sandra Bullock
Katherine Hepburn
Naomi Watts
The males I think can play anything are:
Michael Caine
Will Smith
Anthony Hopkins
Cuba Gooding Jr.
Dustin Hoffman
Samuel L. Jackson (he can go from sheer comedy to gut wrenching evil)
Richard Dreyfuss
Tommy Lee Jones
Morgan Freeman
Although I don't know of any of them that have played the range Jackson has. I haven't seen all that many movies though.
Who would you put on your list?

Jonny Deep - he can be really amazing! Harrison Ford - while I haven't seen him play a bad guy, I really think he could do it.
Richard Dean Anderson - (MacGyver) right after the show went off he played a really scary bad guy - it was good!

Yeah, Depp is something. I mean, if you look at Pirates of the Caribbean from an objective place, it wouldn't have been anything at all without his portrayal of Sparrow. That character, the way it was played, made the entire movie. I adore Orlando Bloom, but without Sparrow his character was rather dumb.
That movie was made for Depp.
I think I sort of saw the one with Anderson. Not the whole thing, just enough to be confused but realize he was a bad guy. I can't remember anything about it though.

Yes, Tom Hanks is really good. I forget him sometimes, but he's done so many roles and they're so varied. I really enjoy his acting. I know Splash wasn't one of his greatest ones, but my hubs and I went to it while we were dating. So it's special to us. Especially since I'm a Pisces, hubs thinks it's even more appropriate.

I think almost all of the old time actors's/actresses could fall under any role and make it believable...like Bette Davis, Katherine Hepburn, Cary Grant, etc. Yes, I love Sandra Bullock...Julia Roberts is great too, and Sally Field, and Meryl Streep. I see some mentioned Johnny Depp...oh YEAH! He's played many different type of roles but I think he's probably going to be remembered more for his Jack Sparrow character--I first saw him in that movie Edward Scissorhands

Anderson played a killer who remodeled this apartment for this lady and built passages behind the walls he spied on her from and the kicker was that there had been a murder in the same place just like it back in the like 1920's. He seemed so nice and yet turned out to be so creepy...

OH--PS--another versatile actor, at least I think is Viggo Mortensen..the one that played Aragon in Lord of the Rings...he's done a few comedy types, and some very serious roles as well and completely believable

I always adored Cary Grant, but only saw him in romantic comedies. So I never really saw his range. I guess I have seen Julia Roberts in a variety of roles, and Meryl Streep. I've only seen Sally Field in Smokey and the Bandit and Cannonball Run. Not really a test of her abilities there!
Viggo Mortensen is versatile too. I've only seen him in LOTR and the horse one, but I've heard of his others. He isn't afraid to try different roles, that's for sure! But I haven't seen any of them.

I disagree with the majority of those. Just because they've been in a variety of different movies doesn't mean they've done them well. When an actor does their part well, you forget you're watching the ACTOR and you're enthralled by the CHARACTER. I've never seen a Samuel L Jackson movie that's done that, EVER!! Might just be the type of person he is, but I'm not a huge fan of his movies because I don't get pulled into them.
For me it's Johnny Depp #1 without a doubt. Not only can he play a WIDE variety of different characters... he can even change his looks to match the character and make that believable. Wait till you see the new Alice in Wonderland movie coming out where he plays the Mad Hatter... I saw a commercial for it and it almost doesn't even look like him!

Heath Ledger did that too. He got into a role really deeply.
I've gotten caught up in a few Samuel L. Jackson movies that pulled me in. He tended to play the same character in the ones I really liked, but when he moved out of that zone, I thought he was still believable. I just wasn't as interested.
The ones I really enjoyed were Die Hard 3 and The Long Kiss Goodnight. Wasn't he in a grimmer one, with Christina Ricci? I avoided that because I thought he might be playing a character that was disgusting. I didn't want to see him do that.
I thought he was believable in Unbreakable, even though the movie itself was very unbelievable. He took a rotten role and gave it a little life. The plot wasn't much to work with, and he didn't exactly shine in it, but he almost made it credible. Almost.

The name that immediately springs to my mind is Viggo Mortensen. He has been incredibly convincing in everything I've seen him in and he's played a lot of different roles. I can't wait to see him in 'The Road'. I didn't like the book and I think it will be a really boring movie but I still want to see him play that character.

Yes, he does a really good job of portraying characters. He's an intense actor and really throws himself into it.

For an actress I would have to say Jodie Foster especially in her child and teen days.
For actor I say River Phoenix (RIP) and Keifer Sutherland.

Did you know Keifer Sutherland even did voice acting? He was quite good in Armitage III. I was shocked to find out that was him. I agree with Jodie Foster too. Can't say as I've ever seen River Phoenix in anything.
I just saw Sam Neill on tv. He's another overlooked actor who does a great job.

Yes i did know that. Its great before Keifer Sutherland is very flexible as with Jodie Foster.
Well the one movie I should mention of River's is The Thing Called Love. It also stars Sandra Bullock who you mentioned in your topic starter and it is actually the last completed film of Rivers as well. Its a great movie if you ever wanna check it out.
