Last week, Price Chopper had ricotta cheese for $1 for a one pound tub.

So I bought some. Now my husband informs me that he doesn't like that kind of cheese. Since when since he likes lasagna? OH well, I can't keep up with his taste changes. I really shouldn't have lasagna because of the tomato sauce. So what kinds of other things can I google recipes for that have ricotta cheese in them? I was just going to throw it in with other cheese and eat it, but he ate the rest of the cheese. So what do you like to put ricotta cheese in?

I do not buy it often, but I have seen dessert recipes that use it. Like cheese cake. I would also tend to use it in the blender and add herbs and call it spread or dip.

That would be great for me when I go to teach in a school. Make a spread and put it on bread for sandwiches.

You could always trick him into eating it by putting it in a desert. Chocolate and ricotta go well together. I have not tried these cookies yet, but here is a recipe that you might like. RICOTTA CHOCOLATE CHIP COOKIES 2 sticks butter 2 c. sugar 1 lb. ricotta cheese 2 beaten eggs 2 tsp. vanilla 4 c. flour 1 tsp. baking powder 6-8 oz. chocolate chips Cream butter and sugar. Add rest of ingredients. Drop and bake at 350 degrees for 8-10 minutes.

That sounds wonderful. Wish I had bought more tubs now. Chocolate cookies with ricotta cheese, I love chocolate. He at least likes it. Thanks!

One thing I've always been curious about is cheesecake made with ricotta cheese, it's supposed to be lighter than the cream cheese version. I just did a quick search and came up with this http://allrecipes.com/Recipe/Sicilian-Ricotta-Cheesecake/Detail.aspx Might be worth a try if you're into cheesecake. And here's the About page for ricotta cheese, looks like it might have some useful info http://homecooking.about.com/cs/cheeseinformation/a/ricotta.htm

I love cheesecake. He doesn't. Maybe I'll make cheesecake and to heck with him. But that will mess up my diet. Thanks for both the websites. Will check out.
